SAJJE-MOOLANGI ROTTI/PEARL MILLET/BAJRA-MOOLI KI ROTI

Winter is here and it’s time to relish all kinds of winter delicacies… such as carrot halwa, different kinds of parathas, masala peanut, soups , masala rice etc etc. Pearl millet flour/sajje or sajje hittu/bajra or bajre ke atta is one such amazing food, which is commonly used during winter to keep the body warm. Sajje/bajra is not a grain but belongs to the family of small seeded grasses, which are collectively known as millets. Rajasthan is the largest producer of Pearl millet/sajje/bajra in India. It is commonly used in Karnataka as well. So today I’m here to share gluten free, alkaline free, fiber rich, protein rich, containing essential minerals like iron, phosphorous and magnesium, nutritious sajje rotti/bajre ki roti/Pearl millet flat bread recipe with the goodness of radish/mooli/moolangi in it.
Ingredients : measuring cup used – 250 ml, makes 4 below shown sized rotis
- Pearl millet flour/bajre ka atta/Sajje hittu – 1 cup (tightly packed)
- Grated radish/mooli/moolangi – 1 cup
- Green chili paste – 1/2 tbsp
- Carom seeds/ajwain/om kalu – 1/4 tsp (heaped)
- Salt – 3/4 tsp
- Hot/Warm water – 2 to 3 tbsp
PROCEDURE :
- Gather everything except water in a parath or a wide bowl, combine everything really well
- Cover and rest the mixture for minimum 10 to 15 minutes
- Mix again and knead into a dough using only 2 to 3 tbsp of water
- Divide into equal portions, spread on a greased sheet/butter paper
- Roast on both the sides on a heated tawa by smearing little oil
- Serve with any kind of side dish – today I have serve this roti along with potato tomato curry/aloo tamatar ki subji.
