BONDA KADALEBEEJA/ DEEP FRIED MASALA PEANUTS/MOONGPHALI

Today I’m here to share the recipe of almost every Bangalorean’s one of the favorite tea/coffee time snack and every Iyengar bakery special snack, bonda kadlebeeja made using Peanuts/moongphali/Kadalebeeja. The peanuts are deep fried by dipping them in bengal gram flour/besan + some regular spices mixture batter (fritters batter) and this is popularly known as bonda kadlebeeja across Karnataka.

Masala bread toast is another famous snack available in Iyengar bakery all over namma bengaluru. These all are an absolute addictions for the native people of Bengaluru.
Ingredients : measuring cup used – 250 ml
- Peanuts/moongphali/Kadalebeeja – 1 cup
- Bengal gram flour/besan/Kadlehittu – 1/2 cup
- Cumin seeds powder – 1/8 tsp
- Black pepper powder – 1/4 tsp
- Red chili powder (byadigi/kashmiri/less hot) – 1 tsp
- Red chili powder (hot) – 1/2 tsp
- Turmeric powder – 1/4 tsp
- Salt – 3/4 tsp
- Water – 1/2 cup (adjust)
- Oil – for deep frying
PROCEDURE :
To begin with, sieve the gram flour in a sifter to remove the lumps if any
Then add all the herbs and spices, salt and water, mix well and whisk it for a while using your fingers in a circular motion, then put the peanuts, combine well, cover and set it aside for around 15 minutes
Meanwhile heat the oil in a pan/kadai, take around 2 spoon full of peanut mixture on a perforated ladle and slowly drop/slide them into the oil with the help of a spoon OR you can drop the peanuts one by one into the oil few at a time and deep fry until crisp on medium heat
Remove from the oil and enjoy with hot cup of tea/coffee
