For the first time made baked fusion hot & sweet idly muffin for the breakfast. I have made idly basically, which is made using semolina idly batter and stuffed it with coconut – jaggery sweet filling

Since I have made this recipe as an entry for a contest in one of the group on Facebook, I have put Ossoro‘s Rabdi flavour in this, as it was compulsory to use Ossoro‘s flavour in the recipe for the contest.

I must say very gladly we had this aromatic, yummy hot & sweet muffins for today’s breakfast which is also with the goodness of sesame seeds in it. Aromatic because of the addition of Rabdi flavor to the sweet stuffing.

You can use any kind of idly batter to make these muffins, but I have prepared it separately and instantly using chiroti rava and black gram powder/urad dal powder/uddina hittu and salt and water. I said instant because we are not going to soak anything, just mix the ingredients in water, ferment and make the idlies.

Ingredients : measuring cup used – 250 ml, makes 6 muffins of shown size

For the batter :

  • Chiroti rava/fine semolina – 175 gm
  • Urad dal powder/black gram flour/uddina hittu – 75 gm
  • Salt – 1/2 tsp
  • Water – 1&1/2 cup

Others :

  • Red chili flakes – 1/2 tsp
  • Baking soda – 1/4 tsp

For tempering :

  • Oil – 2 tbsp (any flavorless oil)
  • Cumin seeds – 1/2 tsp
  • Green chili – 1 to 2 (finely chopped)
  • Curry leaves – 1 tbsp

For the sweet mixture/stuffing :

  • Grated fresh coconut – 1/2 cup
  • Powdered jaggery – 1/4 cup
  • Sesame seeds – 2 tbsp
  • Rabdi flavor – 1 tsp

PROCEDURE :

  • Gather and mix well all the ingredients listed below the heading ‘for the batter’, cover and keep it overnight for fermentation
  • Roast the sesame seeds and simultaneously prepare the tempering and let them cool
  • Now gather and combine everything listed below the heading ‘for the sweet mixture/stuffing
  • Add baking soda and red chili flakes, prepared tempering to the fermented batter and mix well
  • Line the muffin cups, pour the batter until 1/4, then layer the other 1/4 with the sweet stuffing, cover other quarter with the batter again, like this fill all the cups until 3/4
  • Tap the tray on the counter to remove the air bubbles if any
  • Bake in a pre heated oven at 160 degree C for 18 to 20 minutes or until done
  • Remove from the oven, check the doneness and serve
