TARAKARI ANNA/VEGETABLE RICE/ತರಕಾರಿ ಅನ್ನ …restaurant style

We tasted this tarakari anna recently in a south Indian restaurant called Naivedyam (Vipul Square). I and Mukund (my second Son) got attracted by this dish’s name ‘Tarakari anna’, which translates to ‘vegetable rice’ and we wanted to try and know about its taste. We definitely liked this simple recipe … no doubt.
By smelling the dish many a times I would find out the ingredients which probably goes into that particular recipe. I have done this many times rather I always do this. Before eating anything I check for it’s aroma and most of the times my guess of ingredients works. So this is also one such recipe
Very simple and easy to make dish. I’m going to make this very often from now on …How about you ? Ingredients : measuring cup used – 250 ml
- Ghee – 2 tbsp
- Cumin seeds – 1/2 tbsp
- Curry leaves – 2 sprigs
- Cashew nuts – 1 fist full
- French beans – 1/2 cup
- Carrot – 1/2 cup
- Cabbage – 2 cups
- Cooked rice – 3 to 4 cups
- Salt – to taste
PROCEDURE :
- To begin with, wash well the vegetables, cut and keep them ready
- Heat ghee in a pan, add in cumin seeds, curry leaves and cashew nuts stir until they splutter, then put all the vegetables and saute until soft, then add required salt, mix well while stirring, remove from the heat
- Add the cooked rice and mix well. Serve as such or along with gravy or chutney of your choice
- I paired this rice along with hung curd mint chutney
