Vegetables in broccoli sauce with Seasoned rice |

I’m glad to have come up with a creative rice bowl recipe that offers a delicious and colorful experience with vegetables. This recipe not only highlights the vibrant hues of fresh produce but also provides a delightful medley of flavors that will tantalize your taste buds.
By incorporating a variety of seasonal vegetables, such as bell peppers, broccoli, beans, young corn and spinach, each bite bursts with nutrition and freshness. The addition of aromatic herbs and spices elevates the overall taste of the dish besides being a visually appealing meal.
Taking inspiration from the younger generation at home ie our children Manoj, Mukund and Nidhi and also adhering to present day cooking style, today I made this combination for the first time and I myself found this combination a finger licking experience !!
Very very glad to have come up with this recipe which is no doubt healthy, fibre rich, colourful, tasty yummy, tummy filling and a great change from our routine meals
So without any delay let’s directly look into the recipe
Ingredients : measuring cup used – 250 ml
- Oil – 1 tbsp
- Cumin seeds – 1 tsp
- Sesame seeds (white or black or both put together) – 1 tsp
- French beans _ 1/2 cup
- Green, red, yellow bell peppers – 1 cup
- Baby corn – 1/2 cup
- Onion – 1/2 cup
- Salt – 1 tsp
- Water – 2 to 3 cups or as needed
To grind together :
- Broccoli florets – 1&1/2 cup
- Walnuts – 1/4 cup
- Cashew nuts – 1/4 cup
- Ginger – 1 tbsp
- Coriander leaves – a fist full
- Mint leaves – 10 to 12 leaves
- Curry leaves – 8 to 10 leaves
- Green chili – 3 (adjust)
PROCEDURE :
- To begin with boil some water and put well washed broccoli, walnuts and cashews and boil further for 2 to 3 minutes, remove from the heat let it cool completely
- Once cooled, drain all the water and transfer the boiled broccoli and nuts mixture into a mixie jar and also add all the other ingredients listed below the heading ” to grind together” and grind into a fine paste by adding water – your broccoli sauce is ready
- Meanwhile dice onions cut baby corn, bell peppers and french beans length wise and set aside
- Heat oil in a pan, put cumin seeds, once crackled put all the cut and diced vegetables, saute well continuously on high heat for couple of minutes (you need to keep the veggies crunchy)
- Now Put salt, sesame seeds and prepared broccoli sauce into the sauteed vegetables
- Add water to get the desired consistency, let it boil, then remove from the heat
FOR SEASONED RICE :
- Ghee – 1 tbsp
- Red chili flakes – 1 tsp
- Palak puree – 1/3 to 1/2
- Carom seeds/ajwain- 1/4 tsp
- Raw cane sugar – 1/2 tsp
- Salt – 1/2 tsp
- Cooked rice – 3 cups
PROCEDURE :
- Take a small bunch of Spinach/Palak leaves, wash and rinse well and grind coarsely without adding water
- Heat ghee in a pan, Put chili flakes, Spinach/Palak puree, carom seeds, sugar(we add this to retain the colour of spinach puree) and salt, stir until the water evaporates and the mixture turns thick
- Now reduce the heat and add in cooked rice, mix everything well, then remove from the heat
- Enjoy this seasoned rice along with colourful vegetables in broccoli sauce
