Simply veg kofta curry| Sagu kofta curry|

We always make sagu using many vegetables and most of them would be green vegetables right ? So healthy, colourful, tasty and yummy.
However this time when I was making Palak Peas sagu, It just did strike my mind that what if we add vegetable Koftas into that Palak Peas gravy/sagu !
So immediately I converted my thought into a dish and the result was awesome…. and I named it as simply veg Kofta curry/sagu Kofta curry.
This recipe uses varieties of vegetables, Koftas which are steamed and few spices along with the goodness of Palak/Methi. I have used powdered beaten rice (red rice flakes powder) for the binding purpose, you can also use breadcrumbs or Oats.
Overall it’s a kind of easy, simple, healthy, tasty recipe which goes well with roti, chapati, phulka and rice as well. You can always change the spices/masalas & their measurements for sagu/gravy according to your method of making sagu
Please add Koftas into the gravy just before serving, else it absorbs the water in the gravy/sagu and the curry turns very thick

Ingredients : measuring cup used – 200 ml
For Koftas :
- French beans – 1/2 cup
- Carrot – 1/2
- Broccoli – 1/2 cup
- Sweet corn – 1/2 cup
- Fresh green Peas – 1/2 cup
- Potato – 1 Big
- Semolina/powdered beaten rice – 1/4 cup
- Curry leaves (chopped) – 1 tbsp
- Green chilli (chopped) – 1 tbsp
- Salt to taste
Other Vegetables :
- Palak or Methi – 2 cups (chopped)
- Oil – 1 tsp
- Mustard seeds – 1/4 tsp
- Salt to taste
- water as needed
To grind :
- Grated fresh coconut – 1/4 cup
- Cumin seeds – 1/2 tsp
- Black pepper corns – 1/4 tsp
- Cinnamon – 1 small piece
- Cloves – 2 nos.,
- Poppy seeds – 1/2 tbsp
- Roasted gram (hurigadale) – 2 tbsp
- Green chili – 2 to 4
- Coriander leaves – 1/4 cup (you can put 2 tbsp also)
- Turmeric powder – 1/2 tsp
PROCEDURE :
- Chop finely the french beans and carrot, grate broccoli, Coarsely grind sweet corn & Green Peas
- Mix everything well with one big boiled and mashed potato, add in semolina/beaten rice powder, make Koftas and steam them for 12 to 15 minutes
- Heat 1 tsp oil, splutter mustard seeds, add in Palak or Methi, saute it and cook using little water, when cooked add salt as needed
- Grind together all the ingredients under the heading ‘to grind’ using little water, and add it to the cooked Palak or methi
- Let it boil well, then add in steamed Koftas, boil for a minute, remove from the fire and serve immediately or add in koftas just before serving
- Simply Veg Kofta curry, using Methi leaves is ready to serve
