Semolina sweet| rave unde

One of the authentic South Indian sweets, that needs no introduction. I always make these unde (laddoo) using granular sugar and never like to do this using powdered sugar.
Anytime, at our place any sweet will be moderately sweetened, as we like them that way. This time I tried making this unde by adding comparatively very less sugar and we liked it too.
It is indeed a very easy recipe which is very simple to make, healthy and yummy. Preferably small grain semolina (Upma rava) would be perfect for making these ladoos and for that extra added flavour you can use cardamom or saffron or cloves powder etc but without any of these also its aroma is equally good as we roast semolina until fragrant.
Ingredients : measuring cup used – 250 ml
- Rave / Semolina / sooji – 1 cup
- Ghee – 2 tbsp
- Sugar – 1/3 cup ( can be increased according to taste )
- Dry coconut ( grated ) – 1/4 cup
- Cashew nuts, Almonds and Raisins – 1/4 cup (altogether)
- Milk (room temperature0 – 2 to 4 tbsp ( for binding )
PROCEDURE :
- Heat ghee in a pan add cashews, almonds, raisins, fry until turns light brown colour, remove to a plate and set aside
- Now add semolina and roast on a medium flame until semolina is fragrant, do not burn it, keep stirring continuously
- Turn the heat to low, make some space in the centre of the pan and add dry coconut (use freshly grated coconut) and fry until coconut is warm (ie for a minute or so) while combining everything
- Turn off the heat and transfer the semolina coconut mixture to a wide bowl/container, add roasted dry nuts and fruits and also add sugar, mix everything well and let it become warm. Let it cool until you can touch the mixture with your palm comfortably
- Now gradually add milk and mix everything
- Take portions and make laddoo of desired size (generally it is always small in size) and quickly make ladoos when it is still warm
- Now let them cool down completely before you store them
NOTE : you can add slightly more quantity milk , if you are finding it difficult to make ladoos
