Jackfruit vegetable Pulao| Halasinakayi Pulao

Pulao is one of the most common rice preparation that is often made at home. I don’t think anyone has used raw Jackfruit while making Pulao, It just strike my mind and thought why don’t I try making it … and it was a huge hit.
Believe me Jackfruit tastes awesome as it absorbs all the tastes like spices, herbs, salt etc in the pulao. The pulao also has the goodness of Broccoli, which adds a crunchy taste to it. Just to make it different, I have added onions which are cut into cubes, which enhances the overall taste.
This is a simple, quick, tasty, spicy Pulao using Jackfruit as well as other vegetables, accompanied with simple raita.
Ingredients : measuring cup used – 250 ml
- Rice – 1 cup
- Water – 2 cups ( hot )
- Green chilli – 6 to 8
- Coriander leaves – 1/3 cup
- Ginger – 1″ piece
- Grated fresh coconut – 2 to 3 tbsp
- L D E Powder – 1/2 tbsp (Equal quantity of Laung, Dalchini & Elaichi powdered together)
- Black pepper powder – 1/2 tsp
- Oil / Ghee – 1&1/2 tbsp ( I use 1 tbsp of ghee )
- Salt to taste
VEGETABLES : Onion (1big), Beans (1/2 cup), Carrot (1big), Broccoli (1/3 cup) & jackfruit (1cup)
PROCEDURE :
- Wash & rinse the rice, drain all the water and keep it aside, and cut all the vegetables
- Grind together green chilli, coriander leaves, ginger and coconut with very less water
- Heat Oil / Ghee in cooker, Put onion and fry till translucent, add L D E powder, ground paste and saute till raw smell goes
- Add rice and fry for a minute, add vegetables and fry while combining everything
- Add hot water and salt, close the lid and give it one whistle
- Serve with raita
