Potato spicy rice| Alugadde masale bath

As the name itself says the main ingredients in this dish are Potato & Rice. In the same procedure you can prepare this rice with French beans , Cluster beans, cabbage, Capsicum, Brinjal etc individually OR by using more than one vegetable or mixed vegetable.
This is one of the best one pot meal which suits lunch box too. This rice dish, though made spicy doesn’t need any kind of raita to go with it. But if you wish you can always pair this with a raita of your choice. Today I have paired this spicy rice dish along with Poppy seeds Kheer/gasagase payasa
Ingredients : measuring cup used – 250 ml
For rice preparation :
- Potato – 1 big or 2 medium
- Cooked Rice – 1 cup
- Masala Powder – 2-3 tbsp or according to spice level
- Turmeric Powder – 1/4 tsp
- Oil – 2 tbsp
- Mustard seeds – 1/4 tsp
- Cumin seeds – 1/4 tsp (optional)
- Curry leaves – few
- Salt to taste
- Little sugar & lemon juice ( Optional )
For masala powder :
- Coriander seeds – 2tbsp
- Bengal gram – 1&1/2 tbsp
- Black gram/urad dal – 1 tbsp
- Black pepper corns – 1/2 tsp
- Grated dry coconut – 2 tbsp
- Red chilli – 6 nos., for colour & 2 nos., for spicyness
- Curry leaves – few
- Cinnamon – 1/2 an inch piece
- Cloves – 3 nos.,
- Asafoetida – 2 to 3 pinches
- Turmeric Powder – 1/4 tsp
PROCEDURE :
- Dry roast all the ingredients, one by one, under the heading ‘ For masala Powder ‘ & powder it in the mixie & keep it aside
- Wash, peel, chop & boil Potato
- Heat oil in a pan, add Mustard seeds, cumin seeds,curry leaves, steamed potato…. stir once, add turmeric powder, masala powder, sugar & salt
- Combine everything well, Now turn the fire to sim, add cooked rice & required amount of salt ( for rice ) and mix everything well
- Remove from the fire…squeeze lemon , mix again and serve hot
