Chickpeas corn pomegranate salad| Kadalekalu jola dalimbe usli

We all know the health benefits of Chickpeas, I’m not going into its details today rather directly going to write the recipe
This can be made with many variations, but the basic cooking procedure remains the same. Now I’m going to post three variations of it ie 1 usli made using only chickpeas, 2 chickpeas along with sweet corn and 3 chickpeas along with sweet corn as well as Pomegranate
All the three variations tastes yummy in their own way and most importantly we are only going to make it more and more healthy with the addition of an ingredient. So do make this in any variation and enjoy
In the second variation chickpeas along with sweet corn, I have put sprouted chickpeas. I myself have sprouted them at home
Ingredients : measuring cup used – 200 ml
- Chickpeas – 1 cup OR
- Chickpeas + Sweet corn – 1/2 cup each OR
- Chickpeas + Sweet Corn + Pomegranate
Other ingredients :
All these below listed things are though perfect as per general taste, but still can be adjusted according to individual taste
- Oil – 1 tsp
- Mustard seeds – 1/4 tsp
- Green chilli – 1 to 2 tbsp or as per taste
- Curry leaves – few
- Coriander leaves – 2 tbsp
- Grated fresh coconut – 1/2 cup
- Salt as per taste
PROCEDURE :
- Wash & soak chickpeas overnight in potable (pure) water
- Cook or Pressure cook soaked chickpeas along with water till soft
- Meanwhile also steam sweet corn
- Heat oil in a pan… add mustard seeds, green chilli, curry leaves… stir well
- Add drained chickpeas & sweet corn to the pan (we make saaru/rasam with that strained water/stock)
- Add salt… combine everything well by stirring for a while
- Add grated coconut, mix everything, remove from the fire
- Sprinkle coriander leaves and add Pomegranate seeds (if Using you have to add it at this stage) and Serve
