Tapioca is the Root part of cassava plant. It is native to South America, but now cultivated and enjoyed around the globe. It is very high in Carbohydrates, it helps in healthy weight gain, increase in circulation and red blood cell count, Lower cholesterol, improve metabolic activities, protect heart health, prevent diabetes and still many more health benefits
The Kannada word ‘mara’ translates to ‘wood’ and ‘genasu’ translates to ‘Potato’, basically tapioca is very hard vegetable like wood, so one should cook it properly until it becomes very soft. I usually make Palya/subji with Tapioca, that too very rarely… because it is not available here in Gurgaon easily.
The Tapioca palya/subji is made in very simple method, Just cook (steam) it properly and add it to the prepared tempering and mix well, in this, cooking time is the only time consuming factor, once it is cooked/steamed it will be ready with in even less than 5 minutes.
Ingredients : measuring cup used – 250 ml
- Tapioca, cut into cubes – 2 cups
- Grated fresh coconut – 1/2 cup
- Coriander leaves- 2 tbsp
- salt to taste
For tempering :
- Oil – 2 tsp
- Mustard seeds – 1/4 tsp
- Bengal gram – 1 tbsp
- Urad dal – 1/2 tbsp
- Green chilli – 4 to 6 or as per taste
- Curry leaves – few
- Turmeric powder – 1/4 tsp
PROCEDURE :
- Cook/Boil/steam tapioca by adding enough water, until soft
- Heat oil in a pan , add all the ingredients one by one under the heading ” for tempering” and mix well
- Add salt and combine everything well
- Add grated coconut and sprinkle coriander leaves
- Tapioca Subji/Maragenasu Palya is ready to serve
