Sweet corn rice without/with using Palak as well|

This is one of our most favorite one pot meal. Very tasty, healthy, yummy, flavor full rice dish made with very few ingredients.
Actually personally I & children like corn in any form, so this is one of our favorite regular rice dish at our place.
This corn rice can be eaten as such, no accompaniment like raita or curry is needed. It tastes best if made using fresh Corn Kernels, Below is my method of making Corn rice
We can make this corn rice by adding Palak/Spinach leaves as well, which in turn makes this rice dish more nutritious
Ingredients : measuring cup used – 250 ml, Serves – 4
- Rice (raw) – 1 heaped cup
- Sweet Corn – 1&1/2 cups
- Green Peas – 1/2 cup (optional) (this time even I didn’t add)
- Salt to taste
To grind :
- Grated fresh coconut – 1/2 cup
- Coriander leaves – 1/2 cup
- Curry leaves – 1 stick
- Mint leaves – 1 fistful
- Green chilli – 4 to 6 or as per taste
- Ginger paste – 1 tbsp
For tempering :
- Ghee or Butter – 1 tbsp
- Cumin seeds – 1/2 tbsp
- White sesame seeds – 1 tbsp
- Turmeric powder – 1/2 tsp
- Hing – 1/8 tsp
PROCEDURE :
- You can cook rice separately and sweet corn & green peas separately
- Or
- You can cook everything together in a cooker
- Next grind all the ingredients together under the heading “to grind”
- Heat ghee or butter in a pan, put cumin seeds, sesame seeds, turmeric powder, hing and let them splutter
- Now add ground paste and fry till raw smell goes, turn the heat to sim
- Now add cooked rice, sweet corn, green peas and also salt, combine everything well
- Serve sweet corn rice with any raita or as such
Moderated recipe :
As I have told above, this rice dish is made very often at my place. So this time I tried adding very finely chopped Palak (tightly packed 2 cups) as well to this dish, I have chopped the Palak leaves in a new Pigeon string chopper, it is really efficient and time saving. It chops the vegetables very finely as well. Posting below the pic of the same for your reference, I recommend this product to use on regular basis.
The recipe is exactly the same which I have written above, only you just need to add the chopped palak (tightly packed 2 cups) at the very first stage ie… first saute well the palak in ghee/butter + condiments tempering (refer the pic above) , then add in the ground paste and continue with the remaining procedure.
