These steamed savory Kadubu are definitely a healthy alternate for the sweet filled deep fried Kadubu/Gujiya which are often made for festivals and functions.
This time instead of making deep fried kadubu/gujiya for Holi Hunnime, I tried this new version of salt & spicy steamed savory rice flour Kadubu/Gujiya and also made a twist in the filling as well.
For the first time, made this Fresh green peas filling with the ingredients which were at home, used lot of coriander leaves and it also contains almond, fresh coconut hence overall this is a nutritious food.
The outcome was so awesome that, now on…. I have decided to prepare the spicy version in this form only. No need for any accompaniments like….. chutney or sauce etc, it tastes superb if eaten as such as well

Ingredients : measuring cup used – 200 ml
For the outer Layer :
- Rice flour – 1 cup + for dusting
- Water – 2 cups
- salt to taste
For the filling :
- Fresh green Peas – 1 cup
- Coriander leaves – 1 cup
- Grated fresh coconut – heaped 1/2 cup
- Green chilli – 4 or as per requirement
- Ginger – 1/2 tbsp
- Salt to taste
Other things :
- Ghee – 1&1/2 tsp
- Cumin seeds – 1 tsp
- curry leaves – few
- Crushed Almonds – 1/4 cup
PROCEDURE :
- Heat 2 cups of water in a pan/vessel , add salt, when it comes to rapid boiling, turn the heat to sim and add rice flour all at once in the centre and leave it like that for 2 to 4 minutes
- Now stir it well with the help of a spatula till it leaves the edges of the pan/vessel and becomes a mass, remove from the fire and allow it to cool
- Cook green peas using sufficient water till soft and drain all the water and mash it a little
- Grind together all the ingredients under the heading ” for the filling”, coarsely, without adding water
- Heat ghee in a pan, add cumin seeds, curry leaves, crushed almonds, stir for a while
- Now add in coarsely ground paste and fry everything for 2 minutes while mixing well, remove from the fire, cover and keep it aside
- Now knead well the steamed rice flour mix, and make small lemon sized balls and roll it to a small round, dusting with rice flour
- Now fill in the prepared green peas mixture, fold and seal the edges and steam them for 8 to 10 minutes in Idly plates or containers
- Serve hot
