NEER SAARU/INSTANT LENTIL LESS SAARU(RASAM)

An amazing, easy to prepare, very tasty, instant saaru/rasam which doesn’t use any lentil ! Yes you read it right! It’s a no lentil instant saaru. I learnt this wonderful recipe from the admin of the one of the food groups, by name Mr. Gudda bhatta joshi holalu. I have made it several times since I learnt it. Whenever I plan to make heavy, filling items, I prefer to make this saaru. Even though I know two instant saaru recipes, this has become my most favourite. Just roast & grind the masala, add it to the boiling water, add tamarind, salt etc, put tempering and … the wonderful…tasty saaru is ready to use.

Ingredients :
- Coriander seeds – 1&1/2 tbsp
- Cumin seeds – 1/2 tbsp
- Black pepper corns – 1/2 tsp
- Byadigi (not hot) red chilli – 4 nos.,
- Grated dry coconut – almost 1/2 cup
Others :
- Water – 1 litre (adjust)
- Tamarind pulp – 1/2 tbsp (I use 1 tbsp)
- Jaggery – one small piece
- Salt to taste
For tempering :
- Ghee – 1/2 tbsp
- Mustard seeds – 1/4 tsp
- Cumin seeds – 1/2 tsp
- Turmeric powder – 1/4 tsp
- Curry leaves – few
- Whole red chilli (byadigi) – 2 nos.,
- Hing – 1/8 tsp
- Coriander leaves – 1 tbsp
PROCEDURE :
- Dry roast all the ingredients under the heading “ingredients”, and grind into a smooth powder
- In a vessel boil 1 litre water and add ground masala powder, tamarind pulp, jaggery and salt and bring it to boil
- Boil it thoroughly and remove from the fire
- Prepare tempering using the ingredients under the heading “for tempering”
- Pour it over the prepared saaru, mix everything well
- Serve hot with steaming rice
