PLAIN & CAULIFLOWER BANALE AKKI ROTTI/RICE FLOUR ROTTI MADE IN KARAHI/ಸಾದಾ ಮತ್ತು ಹೂಕೋಸಿನ ಬಾಣಲೆ ರೊಟ್ಟಿ

To begin with let me translate the above mentioned Kannada words to English.  The word ‘akki’ translate to ‘rice/chawal’, ‘rotti’ translate to ‘roti’, and the main word here is ‘Banale’ which translate to ‘Wok/kadahi’.

So basically, rice flour roti which is made directly in kadahi/Wok. Otherwise we make akki rotti on a sheet of butter paper and then flip it on the Tawa to cook it. This is the basic version of akki rotti, which uses very few basic ingredients along with rice flour.

You can have it with any kind of chutney , chutney powder , curd, chutney powder mixed with curd, honey etc etc. It just tastes yum. The below mentioned quantity of ingredients makes 8 nos., of rotti.

Ingredients : measuring cup used – 250 ml

  • Rice flour – 2 cups
  • Cumin seeds – 1&1/2 tbsp
  • White sesame seeds – 1 tsp (optional , but I have put)
  • Fennel seeds/Saunf – 1 tsp (optional ,but I have put)
  • Grated fresh coconut – 3/4 cup (you can put less as well)
  • Green chilli – 4 (adjust)
  • Coriander leaves – 1/2 cup
  • Curry leaves – 2 tbsp
  • Salt to taste
  • Oil to roast the thalipeeth
PROCEDURE :
  • Gather everything, except oil in a wide bowl, combine everything well and make dough using sufficient water (add little water at a time)
  • Divide the dough into 8 equal portions
  • Grease the wok and keep one portion of the dough in the centre, pat and spread it with your fingers evenly all over wok/karahi, make a big whole in the centre
  • Keep it thick or thin according to your taste/choice, but don’t spread it too thin
  • Keep the wok on the heat (medium), add little oil in the centre and roast the rotti
  • Remove from the heat when it becomes light brown all around
  • Remove the rotti from the wok and serve with ghee (optional) and any kind of accompaniment of your choice
  • You need to wait for a while to make another rotti, till the wok gets cooled or hold the back side of the wok under the running water to get cooled immediately
  • Repeat the above method and make all the rotti (actually we use two woks simultaneously)

In the below images you can have a look at, Banale/Karahi rotti made by adding steamed and grated Cauliflower. Follow the above recipe itself, but you just need to add 1 cup of grated Cauliflower

  • Boil Cauliflower florets in salt and turmeric water for 2 minutes (in rapidly boiling water), remove from the water, keep under running water, grate them and add along with the other stuffs mentioned in the ingredients list and knead into soft spreadable dough by adding sufficient water
  • Grease the Karahi all over and take a portion of the dough and spread evenly all over the Karahi, Place the Karahi on medium heat and let it cook. Once cooked remove from the Karahi and serve with any kind of chutney of your choice. Generally we serve akki rotti along with fresh coconut chutney, but you can serve it with any kind of chutney of your choice.
