We all at home have no problem in consuming bitter gourd. So for us, bitter gourd is as good as any other vegetable, which is made very often.

Now talking about this stir fry, this goes so very well with Phulka, tandoori roti, chapati, Plain paratha, poori and best part is you can also eat this mixed with rice or as an accompaniment along with saaru/rasam etc

I had recently made this Karele ki subji to go with banana Paratha. So now you all know about my next recipe going to be published here …You are hundred percent right ! it is none other than Banana Lachha Paratha

Earlier also I have tried making Banana Paratha to finish off the over ripen banana I had. The flours which I used in that recipe were sorghum, almond and whole wheat and to have the nutty flavour I have added black sesame seeds. But this time I made the banana Paratha in a entirely different manner though the purpose here also was to clear off the over ripen bananas

However, here you can check some other recipes which uses bitter gourd as main ingredient such as – bitter gourd chutney , bitter gourd Kayirasa , bitter gourd Pulao , bitter gourd Paratha , bitter gourd raw mango chutney

Ingredients : measuring cup used – 250 ml
  • Bitter gourd – 2 big (approximately 2&1/2 cups)
  • Oil – 1 tsp
  • Salt – 3/4 tsp
Others :
  • Oil – 2 tsp
  • Mustard seeds – 1/2 tsp
  • White sesame seeds – 1&1/2 tbsp
  • Onion – 2 medium sized (1&1/2 cup)
  • Tomato – 1 big (1 cup)
  • Cumin powder – 1/2 tsp
  • Turmeric powder – 1/2 tsp
  • Red chili powder – 1&1/2 tsp
  • Pomegranate powder/Amchur powder/amla powder – 3/4 tsp
  • Jaggery powder – 2 tsp
  • Salt – heaped 1/2 tsp or as per taste
Optional : (I make both types, but I usually put)
  • Peanuts , roasted and crushed – 1/2 cup
  • Grated fresh coconut – 2 to 3 tbsp
PROCEDURE :
  • Wash well and thinly slice the bitter gourd, heat 2 tsp oil in a pan, put sliced bitter gourd and saute continuously for couple of minutes on high heat, reduce the heat, put 1/4 tsp of turmeric powder required salt, stir and mix everything well, cover and let it cook. Once cooked transfer to a plate
  • Slice the onion into small pieces and remove seeds from tomato and slice it too into small pieces
  • Again heat heat 1 tsp of oil, put mustard seeds, sesame seeds, stir once, put onion, saute until onions turn slightly soft, then put tomatoes, stir again
  • Reduce the heat, make some space in the centre of the pan, put salt, remaining turmeric powder, red chili powder, cumin powder, pomegranate/amchur powder, jaggery and sauteed bitter gourd stir everything well while mixing nicely
  • Reduce the heat, cover and let it be on the heat for a minute or so, sprinkle grated coconut & crushed peanuts (if you are using), remove from the heat and serve along with any kind of flat bread, Poori or rasam rice or curd rice

Today I have served the bitter gourd stir fry/Palya along with ripen banana Laccha paratha
