CARROT-YELLU RAGI ROTTI….a no onion-no garlic, diabetic friendly recipe

One of the healthiest choice during summer season, ragi rotti using carrot & sesame seeds grated cucumber raita and sour raw mango gojju, which is also a diabetic friendly breakfast idea. Everything ie ragi, carrot, sesame seeds, cucumber along with its skin and mango are rich in fiber – so what else would you like to serve to the people you care about !!
HOW TO MAKE CUCUMBER RAITA – rinse well the cucumber, chop off both the edges, grate it on a grater with big holes, mix it with thick curds and serve – that’s it !! I don’t add any salt to this raita, but you can if you wish to.

Ingredients :
- Ragi flour – 2 cups
- Grated carrot – 2 cups
- White/black sesame seeds – 1&1/2 tbsp
- Green chili – 2 (chopped)
- Coriander leaves – 2 tbsp
- Curry leaves – 2 strings
- Salt to taste
- Water to knead the dough
- Oil to roast the rotti
PROCEDURE :
- Gather the ragi flour, carrot, green chili, curry leaves, coriander leaves, sesame seeds and salt, combine well, knead into a soft dough using required water – knead it well
- Pinch a portion and spread it evenly with your fingers on a greased butter paper

- Cook on both the sides on a heated tawa
- Serve with any kind of accompaniment. Today I served the rotti along with grated cucumber raita and sour raw mango gojju
