BROKEN WHEAT IDLY/DALIA/GODHI NUCHHINA IDLY – VIDEO

To make this fermented batter idly recipe diabetic friendly, just replaced the rice with broken wheat/lapsy/dalia/godhi nuchhu, rest same measurements and procedure like how we make rice idly. This is one more way to reduce the intake of rice. We can also make instant version of dalia idly using sour curd, the recipe of which will post some other time.

Ingredients : measuring cup used – 250 ml, makes 18 idlies of shown size

  • Broken wheat – 1 cup
  • Split black gram/urad dal/uddina bele – 1/2 cup
  • Fenugreek seeds – 1 tsp
  • Salt – 1/2 tsp (heaped)
  • Water – to grind

PROCEDURE :

  • Rinse well and soak broken wheat in enough water in a vessel for 2 hours
  • Rinse well and soak black gram and fenugreek seeds in a separate vessel for 2 hours
  • Drain all the water and first grind the black gram + fenugreek seeds mixture into a thick fine paste using little water
  • Now to the same jar put the broken wheat and salt and run the mixie for a minute just to get everything mixed well
  • Transfer to a container, cover and let it sit for overnight or 8 to 10 hours to ferment
  • Pour the fermented batter to the wet idly mould and steam them for 13 minutes, turn off the heat and let it sit for 10 to 15 more minutes
  • Now remove the idlies and serve with coconut chutney
