Today I’m here with one of the Karnataka special, traditional, all time favourite holige recipe, which people across Karnataka take a fancy to this sweet !!
This is one of our most favourite sweet or holige. It is very easy to make but one needs to be extra careful while preparing the filling/stuffing as the consistency plays a major role. This holige can be made on any occasions be it big or small. Usually this holige is necessarily made On the eve of the wedding ie on the day of ‘varapooje’ which is previous evening of the wedding day in Karnataka.
Here I have used desiccated coconut, but you can also put dry coconut grated at home. If in case you are using grated dry coconut then you need roast the coconut until raw smell vanishes and turns light brown , let it cool completely and then grind/powder it also along with sugar.

I never use maida, so I have put whole wheat flour. And you can use refined sugar, again I never use that too so I have put raw cane sugar. I have the idea of making this holige by putting coconut sugar as well. Shall post it here once I try it out.
And the most rare and special one being – savory/spicy Puran Poli/Kharada holige and I insist you should definitely check this recipe without fail …
Both my mom and mom-in-law used to make this holige for festivals or functions at home. So I have grown up relishing this holige and in my experience you can never stop at one holige … I bet !!

Ingredients : measuring cup used – 250 ml
For the outer layer :
- Chiroti rava/fine quality semolina – 1 cup
- Whole wheat flour (sifted in fine sieve) – 1/4 cup
- Salt – a pinch
For the stuffing :
- Dry coconut (desiccated) – 3/4 cup
- Sugar/raw cane sugar – 1/2 cup
- Roasted rice flour – 2 tbsp
- Cloves – 6
- Nutmeg – 1/4 tsp
- Mace – 1/8 tsp
- Cardamom Powder – 1/2 tsp
- Ghee – 1tsp
- Milk (at room temperature) – 1 to 2 tbsp (actually 1 tbsp is enough)
PROCEDURE :
- To begin with, Gather together chiroti rava, wheat flour and salt, mix well and knead into a soft dough using required amount of water, knead it well until the dough turns soft, cover and set aside for minimum couple of hours
- Now in a mixie jar take cloves, nutmeg, mace, cardamom powder and sugar and make a fine powder, then transfer to a bowl/Parath
- Put the coconut to the powdered sugar mixture, roast the rice flour in a small pan until all the moisture is evaporated and add it to the sugar – coconut mixture
- Now add ghee and mix everything well while rubbing the mixture between your palms
- Now bind into a soft stuffing by adding milk gradually. Be very careful while adding milk for very fast the mixture becomes too thin, So add 1/2 tbsp of milk at a time
- Make equal portions of both the dough and the stuffing/filling
- Keep a portion of the filling in a portion of the dough, roll into a thin circle on a greased sheet and cook on both sides on a heated tawa
- Serve with a tsp of ghee
