Sharing the recipe of one of our most favorite rice dish, Mumbai famous tawa Pulao. I regularly make this particular pulao since last few years now. Initially followed the recipe of Chef Sanjyot Keer, but gradually made modifications as per our requirement to suit our taste and preference.

This chili weather and hot tawa Pulao – the pair made in heaven !

However I have put freshly home made Pav bhaji masala powder and also have put home made ghee, which happens to have video demonstration as well. Ingredients : measuring cup used – 200 ml
  • Cooked rice – 6 cups (adjust)
  • Table salt – 1 tsp ( to add to the rice at the end while mixing with the vegetables)
  • Turmeric powder – 1/2 tsp
  • Pav bhaji masala powder (home made) – 2 tbsp
  • Ghee (home made) 1 tbsp
  • Oil – 1 tbsp (I put cold pressed coconut oil, but you can use as per choice)
  • Cumin seeds – 1 tbsp
  • Saunf/fennel seeds – 1 tsp
  • Fenugreek seeds powder -1/2 tsp
  • Onion – 1 cup
  • Cabbage – 1 cup
  • Capsicum – 1 cup
  • Carrot – 1 cup
  • Tomato – 1 cup
  • Fresh peas – 3/4 cup
  • Salt – 1&1/2 tsp or to taste
To grind together :
  • Byadigi whole red chilies (gives out good colour) – 4 to 5
  • Garam masala powder – 1/4 tsp
  • Cumin seeds powder – 1&1/2 tsp
  • Tamarind juice OR Lemon juice – 1 tbsp
  • Jaggery – 1&1/2 tsp
  • Rock salt – 1 tsp
PROCEDURE :
  • To begin with, remove the seeds from the byadigi red chilies and soak them in boiled water for 15 minutes or so, drain all the water and take the red chilies in a mixie jar, also add in all the other ingredients listed below the heading ‘ To grind together’ and grind into a coarse paste
  • NOTE : if you are putting tamarind juice, then grind it along with other stuffs and in case you are using lemon juice, then you need to add it to the prepared rice at the end.
  • Rinse well and cut all the vegetables length wise and measure the peas and set aside
  • Heat ghee and coconut oil in a pan/Karahi, add in cumin seeds, fennel seeds and fenugreek seeds powder and when they crackle add onion and saute for a while, then add in capsicum, cabbage, carrot and tomato stir everything once, now add the Peas (you can also cook peas separately and then add) and saute for a minute and then add in 1&1/2 tsp salt, stir again, cover and let it cook on medium low heat until veggies turn slightly soft (do not over cook, keep all the vegetables slightly crunchy)
  • When the vegetables are cooked add in the ground chili paste, Pav bhaji masala powder and turmeric powder, Stir continuously while mixing everything nicely on high heat for a minute or so, then turn the heat to low
  • Now add the cooked rice and 1 tsp table salt and combine everything thing well again on high heat, until combined well. Serve with any kind of raita
  • I have served this awesome tawa Pulao along with tomato cucumber raita and sliced onion, cucumber and a small lemon piece
