This is an amazing recipe made by using lots of fresh coriander leaves. It is simple yet a healthy one pot meal which can be packed for school/Office as well. Coriander has multiple health benefits such as, it is a wonderful source of dietary fiber, Iron , manganese etc. It is rich in Vitamin C, Vitamin K and protein. Coriander lowers the bad cholesterol (LDL) and increases the level of good cholesterol (HDL). They say it is good for treating Alzheimer’s disease.

Coriander is a good food for digestive systems, promotes liver functions and diabetes patients as well as it can stimulate the insulin secretion and lower the blood sugar levels….. And I have used plenty of coriander leaves in this recipe. Apart from all these it contains anti-inflammatory properties and that is why it is good against inflammatory diseases such as Arthritis.

Today I recreated my own recipe (it feels very nice to do so), which I had posted earlier (on 13/9/15) on my blog. I have adopted some changes and recreated it. Not much difference in taste….. it tasted equally good, it’s just like an addition of some more vegetables…that’s it!

However this time I have taken step wise pics as well and now going to upload the same. I have written ‘(addition)’ in those places where I have made changes. If in a hurry you can skip all the ‘(addition)’ and prepare this rice and I promise you’ll not be compromising in any way.  

I insist you all to definitely try this recipe at least once…And I’m sure you’ll make it time and again, Because it is , no doubt a wonderful healthy recipe. I add roasted and crushed peanuts at the end to retain that crunchiness,  or else you can add it to the boiling water itself.

Ingredients :  measuring cup used – 250 ml
  • Rice (I used sona masoori) – 1 1/2 cups
  • Water – 3 cups
  • Onion – 1 cup
  • Tomato – 1 cup (addition)
  • Green Peas – 1/2 cup (addition)
  • coriander leaves – 2 cups
  • Ghee -1/2 tbsp
  • Cumin seeds – 1/2 tbsp (addition)
  • Curry leaves – 1 tbsp (addition)
  • Green chilli – 3 nos., (slit)
  • Roasted and crushed peanuts – 1/2 cup
  • Salt to taste

    To Powder together :

  • Black pepper corns – 1/2 tsp
  • Green cardamom – 2 nos.,
  • Cloves – 6 nos.,
  • Cinnamon – 1″ piece

     PROCEDURE :

  • Powder together all the ingredients under the heading “to powder together”
  • Heat ghee in a cooker and add in cumin seeds, curry leaves, powdered masala and let it crackle
  • Now add in chopped onions and fry till translucent
  • Now add in slit green chilli and fresh green Peas, saute for a while, and add in tomato and saute it again, add in washed rice & required amount of salt and combine everything well
  • Now add in 3 cups of water and let it come to boil (you can also use hot water instead), finally put coriander leaves and close the lid
  • Pressure cook till done (one whistle is enough in my cooker)
  • Remove from the fire, once it is cooled transfer it to a serving dish
  • And sprinkle roasted & crushed peanuts
  • Serve Coriander leaves Pulav with any kind of raita
