Raw mango summer drink| aam Panna

Mango Panna or Aam panna is commonly prepared during the Peak summer widely in northern parts of India, when raw/green mangoes are available in abundance. This is also known as Kairi ka Panna
Aam Panna is said to be the natural coolant and mainly known for its heat resistant properties besides having other many health benefits. I have also seen many people use the diluted Panna for filling golgappa/Panipuri instead of regular khatta meetha Pani
It is very easy to make and store the undiluted mango Panna concentrate and has a long shelf life when refrigerated. You just need to mix plain, drinking water in a small portion of Panna concentrate to transform it as a drink/sharbat/juice
Keeping this concentrate turns out to be very helpful when you have sudden guests at home or even when you are back home after spending some hours in the scorching sun or just simply when you feel like having some cold homemade summer drink, Just mix with water and serve in the blink of an eye and also have that satisfaction of serving a healthy drink
Ingredients : measuring cup used – 250 ml
- Sour mango pulp – 1&1/2 cup (obtained from 6 mangoes)
- Water – 2 cups
- Jaggery – 3 cups
- Cumin Powder – 2 tsp
- Black pepper powder – 1/2 tsp
- Cardamom powder – 1&1/2 tsp
- Rock salt – 1&1/2 tbsp (table salt – 1 tbsp)
- Fresh mint leaves – 2 or 3
PROCEDURE :
- Pressure cook the mangoes in two cups of water until one whistle or boil the mangoes in an open vessel until they become soft inside and mango gets discolored
- Transfer the cooked mangoes along with water to the strainer and let it get cooled completely. (I discard the water in which mangoes are cooked, if you want you can collect that water and add it to the glass later when you serve the aam panna)
- When they become cool enough to handle, remove the skin and scrape out the pulp using a knife/spoon and transfer the pulp to a mixie jar
- Also put jaggery powder, cumin powder, black pepper powder, cardamom powder and salt to the mixie jar and grind everything together to get undiluted concentrate.
- The colour of the concentrate is such because I have put organic jaggery, but if you put sugar or light coloured jaggery, then you may get yellow or light greenish yellow colour
- Transfer this concentrate to a glass jar or any container, once the concentrate is completely cooled store it in the refrigerator

- When serving, mix the concentrate in water, sprinkle with some crushed mint leaves and enjoy your drink
HOW TO PREPARE AAM PANNA DRINK USING HOME MADE CONCENTRATE :
- I normally mix 1 tbsp of concentrate in 100 ml of water which becomes a perfect blend, but you can always adjust and do as per your requirement
To make Aam Panna by using Cane sugar/date Palm rock sugar, we need to Put 2 to 2&1/2 cups (I have put 2 cups) of powdered date Palm rock sugar and rest follow the same/above method. By the way you can put cane sugar as such, there is no need to powder it.
