Mixed vegetable Pulao| Mishra tarakari Pulao

This is the very basic kind of Pulao recipe which I’m making since almost 29 years and the noticeable part is I’m making it in these particular method only since all these years. I haven’t even done a small change and can never even think of doing so

Here are the two methods –

  1. Without onion, mint leaves, coriander leaves and curry leaves
  2. By also adding all these things

So let’s directly get into the recipe details without delay

  • Rice – 3/4 cup
  • Boiled water – 1&1/2 cup
  • Oil/Ghee – 1&1/2 tbsp (Ghee enhances the taste)
  • Cumin seeds – 1 tsp
  • Onion – 1/2 cup (skip for onion less version)
  • Salt – 1&1/2 tsp
  • French beans – 1/4 cup
  • Carrot – 1/4 cup
  • Capsicum – 1/4 cup
  • Cabbage – 1/4 cup
  • Fresh peas – 1/4 cup
  • Cauliflower florets – 1/4 cup
  • Mint leaves – 1/2 fistful
  • Coriander leaves – 1/2 fistful
  • Curry leaves – 1 sprig
  • Grated fresh coconut – 1/4 cup
  • Green chili – 3 to 4 (adjust)
  • Red chili powder (less hot, which gives out colour) – 1/2 tsp
  • LDE powder – 1 tsp (LDE = equal quantity of Cinnamon, Clove and Cardamom powdered together)
  • Turmeric powder – 1/2 tsp (add 1 tsp if you are using raw turmeric)
  • Ginger – 1/2 tbsp
  • Gather and grind together all the ingredients listed below the heading ‘to grind together’
  • Heat oil/Ghee in a cooker, put cumin seeds once splutter put onion and saute until translucent, then add the ground paste
  • Now take mint leaves, coriander leaves and curry leaves into the same mixie jar and grind by adding little water (take portion of water out of reserved 1&1/2 cup) and add it to the cooker and stir once
  • Now put all the vegetables and remaining water, stir and let it come to boil, once it starts boiling put well rinsed rice and let it come to boil again
  • You can put cauliflower now to retain its shape, close the lid and cook until one whistle. (One whistle is enough in my cooker, but you can do as per your cooker requirement). Once pressure is released completely, you can see that the yummy Pulao is ready to consume
  • Serve along with any kind of raita of your choice
