Puffy leavened deep fried bread| Bhature| Bhatura yeast soda Eno free| ಭಟೂರೇ|ಭಟೂರ

Who doesn’t know about this super delicious pair which is a super duper hit all over India….isn’t it ! Chole bhature or Chana bhatura is a famous, traditional street food, though originated within the north India and eastern parts of India, was invented in Delhi in 1940’s as they say.
Originally Chole is a tasty curry made using either brown or white chickpeas and Bhatura is a leavened deep fried bread made using maida/apf flour. The leavening agent used in this recipe is either yeast or baking Powder/baking soda. But later on the recipe got moderated and now it can also be made using whole wheat flour and without using any yeast or baking powder or soda.
So I have put whole wheat flour and fine semolina sans yeast, baking powder and baking soda It also turns out to be equally fluffy, crisp rather comparatively more crisp and along with some more health benefits though it is deep fried.

And one more interesting version of it is Punjabi satvik chole which is being made more healthy and yummy by putting seasonal goodies like Amla, which is available during winter and raw mango, which is available during summer.

Ingredients : measuring cup used – 200 ml, makes 7 bhatura of below shown size
- Wheat flour – 2 cups + for dusting
- Salt – 1/2 tsp
- Semolina/chiroti rava (Fine sooji) – 1/4 cup
- Lemon juice – 1 tsp
- Curds – 1/4 cup
- Sugar – 1 tsp
- Poppy seeds (khus-khus) – 1 to 1&1/2 tbsp (I have added 1&1/2 tbsp)
- Water (warm) – 3/4 cup, to knead the dough (adjust)
- Ghee/Oil – 1/2 tbsp (I have put oil)
- Oil – to deep fry the bhaturas
PROCEDURE :
- Gather together all the ingredients one by one from 1 to 7, mix well and knead into a semi stiff dough using warm water, Apply ghee/oil all over, knead again for couple of times, Cover and set aside for 1&1/2 to 2 hours
- Once soaked, knead it again for a while, divide into portions, roll into the semi thick oval shaped sheets
- Deep fry the bhaturas one at a time till they puff-up & turn golden brown in hot oil
