Corn soup| Sweet corn soup

A nutritious , healthy, soothing soup suitable for those rainy, cold chilly days. We all at home like this soup and this is one of our favourite. This soup has all the goodness of vegetables and sweet corn to the maximum.
Except for boiling corn and sauteing vegetables , this soup is very less time consuming, It will be ready in no time with all the easily available ingredients at home. I find it very easy and hassle free to prepare. Here is my method of making sweet corn & vegetable soup
To make the soup thick we can use ragi flour or flax seeds powder or ground oats or maize flour. Today I have put oats Powder/ground oats. Also I think we can put rice flour as well to the soup to get the thickness
You can use plain water or any reserved vegetable stock also to prepare this soup or you can boil the veggies and corn kernels we are putting in this recipe, in the water and use that fresh stock only for preparing the soup.
Or You can simply saute the vegetables and boil only the corn kernels using some portion of the total water needed and use the remining water for grinding cooked corn and stirring the oats powder etc. Or vegetables and corn kernels can also be steam cooked
However I have consumed four cups of water in total to make this soup and I have boiled the corn and vegetables separately using some portion of water and used the remaining water for grinding and to stir the oats.
Ingredients : measuring cup used – 250 ml, servings – 4 to 5
- Finely chopped french beans, carrot, cabbage – 2 to 3 tbsp each (adjust)
- Sweet corn Kernels – 1 cup + 1/3 cup
- Water – 4 cups (in total)
- Oats powder – 2 tbsp
- Butter – 1 tsp
- Black pepper powder – /2 tsp
- Ginger paste – 1 tsp
- Salt – 2 tsp
PROCEDURE :
- Boil the corn kernels by adding some portion of the water, let it cool completely, reserve some portion for later use and then grind remaining corn into a fine paste
- Now in a container heat butter, add pepper powder, ginger, ground corn cream, reserved corn kernels, vegetables with stock and salt and let it come to boil
- Now stir the oats powder in the water and add it to the boiling soup, stir well continuously until it boils further rapidly
- Remove from the heat and enjoy your hot bowl of soup
