Paneer bhurji | Crumbled spicy Paneer |

ಪನ್ನೀರ್ ಭುರ್ಜಿ

Paneer bhurji or crumbled Paneer, made using freshly home made Paneer. Here the Hindi word ‘bhurji’ translates to crumbled. So as the name itself depicts, crumbled Paneer is used in this recipe along with couple of other regular vegetables and spice powders.

As I have mentioned earlier also many a times, I learnt all the main/familiar/famous/regular dishes of North India from my neighbors, when we shifted to Gurgaon almost fifteen years back. She/they taught me how to make Shahi Paneer, Kadai Paneer, Paneer burji, Dal makhani, Rajma and chole etc.

Though I also referred some books of famous authors and became more perfect in that. However I don’t use that much Oil/Ghee as how they cook here in North India, nevertheless I don’t think we are compromising in the overall taste or color or anything for that matter.

Slowly we developed a liking for these dishes and are often made at my place. And also I do moderate the recipe slightly as per our taste/requirement often. Below is my way of making this dish explained in detail with stepwise pics.

Ingredients : measuring cup used – 250 ml, servings – 3

  • Paneer – 183 gms
  • Onion – 1 cup (1 big)
  • Capsicum – 1/2 cup (1 medium sized)
  • Tomato – 1/3 cup
  • Fresh green peas – 1/2 cup (optional)

Others :

  • Oil / Ghee – 1 tbsp ( I use ghee )
  • Cumin seeds – 1 tsp
  • Green chili – 1
  • Coriander leaves – 2 tbsp
  • Curry leaves – 2 sprigs( Optional, but I include this also )
  • Red chilli powder, Kashmiri – 1 tsp
  • Red chili powder, hot – 1/4 tsp
  • Coriander seeds Powder – 1 tsp
  • Turmeric powder – 1/2 tsp
  • Garam masala powder – 1/2 tsp
  • Cumin powder – 1/2 tsp
  • Salt – 1 tsp Or to taste

PROCEDURE :

  • Chop onion, capsicum and tomato and simultaneously steam green peas
  • Heat Oil/Ghee in a pan, add cumin seeds, green chili, curry leaves, 1 tbsp of coriander leaves and stir once
  • Then add the onion, saute until they turn soft, then add capsicum and saute until it also turn soft
  • Now add tomato and Peas (if using) saute for few minutes
  • Reduce the heat to low and add all the spice powders along with salt and saute while combining everything well
  • Now add the crumbled Paneer and stir gently so that all the spices and salt gets incorporated into the paneer as well
  • Remove from the heat and sprinkle the remaining coriander leaves
  • Serve with any kind of roti. Today I have paired the Paneer bhurji along with Ajwain lachha Paratha
