Sandwich Idly | Stuffed Idly | Sweet & spicy Idly |

Making stuffed idly is not a new thing, My dadi (paternal grand mother) used to make stuffed idly many years ago. They never ate onion so… she used to make palya(subji) using only potato for filling.
Actually this time when I made idly batter and just before making idly…. I thought … however we make both stuffed idly and also sandwich Dhokla, why not sandwich idly then !! So the result is this!
And after tasting this, one more thing came to my mind ..People who find it difficult or has no time to make ” Kuchhida kadubu ” (steamed rice gujiya)…can easily prepare this on Nagara Panchami day. It is absolutely yummy…. In this recipe we need idly batter, chutney & Coconut jaggery mix (kaayi hoorana).
To make sandwich Idly we need…..
Idly batter : measuring cup used – 200 ml
- Black lentil/Urad dal – 1/2 cup
- Beaten rice – 1 fist full
- Rice / Rice rava/Idly rava – 1 cup
- Salt as needed
Soak urad dal for 2 hours, wash beaten rice and drain all the water, Grind both to a smooth paste using required amount of water, now add rice rava & salt and grind the whole thing for 1 more minute, ferment it for 6 to 8 hours
Spicy Chutney :
- Grated fresh coconut – 1cup
- Green chilli – 6 to 8 or as per taste
- Curry leaves – 1 string
- Coriander leaves – 1 fist full
- Roasted gram – 2 tbsp
- Tamarind – a small piece
- Hing – 1 fat pinch
- Salt to taste……….. Grind everything together coarsely with very less water
Coconut – Jaggery mix (kayi hoorana) :
- Grated fresh coconut – 1 cup
- Jaggery – 1/2 cup
- Cardamom powder – 1/8 tsp…….. Heat a pan put coconut and jaggery, keep stirring till water evaporates completely and the mixture becomes dry, add cardamom powder, mix well, remove from the fire and let it cool (You can prepare this mixture well in advance, it can be stored for more than a week)
PROCEDURE :
- Wet the idly plates (I never apply oil on the plates)
- Pour little batter first , then spread the prepared chutney on it, Pour some more batter on the top
- Repeat the same for sweet idly also
- Steam it for 12 to 15 minutes
- Sandwich idly is ready to serve (spicy idly can also be served with sambar)
NOTE :
- We can make stuffed dal (lentil) idly also by using soaked and coarsely ground dal+spices paste, which we prepare for making steamed dumplings
- We can also stuff finely chopped mixed vegetable Palya (subji) in the Idly
Today tried one more combination for stuffing, ie…seasonal …. mixed chopped ripe mango + jaggery + grated fresh coconut , just combine all the three ingredients and stuff in the idly. But this time the idly batter used is of button/mini idly, rest follow the same procedure as above
