SOUTHEKAYI AVALAKKI

Southekayi avalakki is a no fire, simple, summer friendly recipe, in which southekayi translates to cucumber (kheera) and avalakki translates to flattened rice (poha). No cooking is needed in this recipe except for the tempering. Since it is very filling , we can have it for breakfast with a glass of Lassi/buttermilk. I make it using both red rice poha and white rice poha, and once in a while it can also be indulged by diabetic people when made using red rice poha and we can increase the quantity of cucumber and use still less quantity of poha while serving them. Ingredients :
- Flattened rice/Poha/Avalakki – 1/2 cup
- Finely chopped cucumber – 2 cups
- Coriander leaves – 3 tbsp
- Grated fresh coconut – 1/2 cup (adjust)
- Lemon juice – 1/2 tbsp (adjust)
- Salt to taste
For tempering :
- Oil – 1 tsp
- Mustard seeds – 1/4 tsp
- Green chilli – 1/2 tbsp (adjust)
- curry leaves – 1 tbsp
PROCEDURE :
- Wash well and drain all the water from avalakki/Poha and keep it aside covered for 10 minutes
- Prepare tempering using all the ingredients under the heading ” for tempering “
- Now in a bowl gather together chopped cucumber, avalakki/Poha, coriander leaves, coconut, salt & lemon juice
- Combine everything well and add in the prepared tempering
- Give it a final mix and serve
