Broccoli Paratha using whole wheat flour or multi grains flour |

There are some recipes which though I make regularly, never click the photo and post the recipe here. Always avert thinking that…..next time I’ll definitely post ! And this is one of those !

A very healthy, nutritious, full of health benefits and yummy broccoli parathas can be eaten with any kind of accompaniment or with plain thick curd. Garlic and garam masala powder can also be added for that extra flavour. But I never like to add those.

Ingredients : measuring cup used – 200 ml

For the dough :

  • Whole wheat flour or multi grain flour – 2&1/2 cups
  • Salt to taste
  • water to knead the dough

For stuffing :

  • Broccoli – 1 big
  • Onion – 1 big
  • Green chilli – 1 (adjust)
  • Oil – 1/2 tbsp
  • Cumin seeds/powder – 1 tsp
  • Red chilli powder – 1/2 to 1 tsp (adjust)
  • Turmeric powder – 1/4 tsp
  • Salt to taste

PROCEDURE :

  • Mix the flour and the salt, Knead a stiff and soft dough using water and keep it covered aside
  • Clean and separate the broccoli florets, rinse well and grate it or run it in a mixie to make paste along with one green chilli
  • Finely chop or grate onion
  • Heat oil in a pan, add in cumin seeds/powder, when it splutter add in onion and fry till translucent
  • Now add in broccoli paste, mix and saute everything well till raw smell vanishes and it is soft
  • Now add in salt, red chilli powder and turmeric powder and combine everything well
  • Remove from the fire when it comes as a whole, leaving the edges of the pan
  • Allow it cool completely, then make portions (I make make 8 equal portions)
  • Pinch a portion of the dough (I make 8 equal portions) flatten a little, Place the stuffing in the centre, cover it by all the sides and roll it into round shaped disc
  • Heat the griddle/tawa and roast the paratha on both the sides by applying little oil
  • Serve Broccoli paratha with any kind of accompaniment
