RIDGE GOURD/HEEREKAYI NUCHHINUNDE & MATWADI PALYA/SUBJI

Just recently I had posted/shared ridge gourd/heerekayi steamed dumplings recipe which I innovated. So when I made it repeatedly I also thought of transforming those steamed dumplings into a palya/subji which becomes our own Karnataka special – matawadi palya ! and I had also mentioned about this idea of mine in the   ridge gourd/heerekayi steamed dumplings  post. So Went ahead and tried the same and is a big hit at my place now, which is also a diabetic friendly dish/recipe.  During summer this palya/subji turns out to be a soulful food if made with anna, tili saaru (rice, rasam).  You can eat this protein rich diabetic friendly dish as such for breakfast as well. So gladly sharing the recipe which is an awesome addition to our own Karnataka special dish matawadi palya . Just go ahead and prepare it as we are getting lot of ridge gourd in the market right now. If dumplings are ready then… it won’t take much time to prepare this palya/subji, it will be ready in 5 minutes.

 In this same method I have also made sorekayi/bottle gourd nuchhinunde and matwadi palya with a small twist ie…. have added about 1/4 cup of grated raw mango to make tangy and it was yummy. Please do check below for the process pics.

Ingredients :

  • nuchhinunde/steamed dumplings – 10 nos., (Please click on that  ⇐ to get the dumplings recipe)
  • Oil – 1 tsp
  • mustard seeds – 1/2 tsp
  • Cumin seeds – 1/2 tsp (optional, I don’t put)
  • Curry leaves – few
  • Coriander leaves – 2 tbsp
  • Grated fresh coconut – 1 cup (the more we put the greater will be the taste)
  • Salt – a little to balance the taste

 

PROCEDURE :

  • Heat oil in a pan, add in mustard seeds, (cumin seeds -if using) curry leaves and allow them to splutter

  • Add in grated fresh coconut, check for the salt and mix everything well while stirring

  • Remove from the fire and sprinkle coriander leaves

  • Further use as you wish
