Beetroot halwa along with jaggery and figs |

ಬೀಟ್ರೂಟ್ ಹಲ್ವಾ ಅಂಜೂರ ಮತ್ತು ಬೆಲ್ಲದೊಟ್ಟಿಗೆ
I make this halwa in my own way. I feel like more than sugar, jaggery goes very well with this particular recipe. Based on this recipe I make carrot halwa also using jaggery.
In my opinion both the halwa tastes best with jaggery than sugar. The usage of fresh coconut, figs and milk makes this beetroot halwa more aromatic and tasty. One can make out that beetroot is being used in this recipe by looking at the colour of the halwa, but they can’t only with its aroma.
Overall a very simple, quick, easy and healthy recipe to enjoy anytime. So one more addition to my list of dishes made using beetroot – the wonder vegetable. It tastes very yummy – it is the yummiest, but you need to make it to believe it.

Ingredients : measuring cup used is of 200 ml
- Grated beetroot – 1 cup
- Grated fresh coconut – 1/3 cup
- Milk – 1/2 cup
- Jaggery – 1/3 cup
- Ghee – 2 tsp
- Figs/anjeer – 3 nos., (cut into chunks)
- Cashew nut – 8 nos.,
PROCEDURE :
- Heat ghee in a pan, add in figs/anjeer chunks and broken cashew nuts and roast them for a minute
- Now add in grated beetroot, saute for a while, also add in coconut and saute again
- Now add in milk, stir and let it cook on medium low heat till all the milk is evaporated
- Next add in jaggery, it releases the moisture, stir until it becomes dry again
- Remove from the heat and serve hot (it also tastes equally good when becomes cold)
