Avalakki puri unde or Puffed rice flakes unde/ladoo is a traditional snack/sweet from south India that too from Bangalore – Mysore region. Here the word ‘avalakki’ translates to rice flakes, ‘Puri’ translates to Puffed one and ‘Unde’ translates to ladoo.

Actually this snack is particularly made in those big functions like marriages, threading ceremony etc. It is an age old tradition to give unde-chakli ie… ladoo and rice chakli in the form of a goodies bag, to each and every person who attends the function – just as a gesture of thanking them for attending the function.

Obviously I learnt this recipe from my mom and I used to help her whenever she made this snack, so in the process learnt it very well. But this time here in Gurgaon while I made this ladoo/unde I have also added roasted white sesame seeds (which we (brahmin community) never add to this unde when we make it for functions purpose or the authentic preparation never uses sesame seeds) just to make it winter suitable.

Actually as jaggery, groundnut, dry coconut, sesame seeds etc go well with each other…the ladoo/unde tasted yummy. So gladly sharing the recipe with you all.

Ingredients : measuring cup used is of 250 ml

  • Avalakki puri/puffed rice flakes – 10 cups (loosely packed)
  • Dry coconut (finely chopped) – 1/2 cup
  • Roasted gram/chana/hurigadale – 1/3 cup
  • Groundnut (roasted & roughly split) – 3/4 cup
  • White sesame seeds – 1/3 cup (roasted)
  • Powdered jaggery (tightly packed) – 1&1/2 cups
  • Water – 1/2 cup
  • Rice flour – to dust the hands

PROCEDURE :

  • To begin with dissolve the jaggery well, then pass it through the strainer to remove the impurities, then bring it to boil on medium heat till you get one thread consistency or if you put a drop of jaggery syrup into a cup of water, it will remain undissolved
  • Gather coconut, roasted gram, groundnut, sesame seeds in a wide bowl, add in the puffed rice flakes/avalakki puri and combine everything well
  • Now take a portion of this mixture in an another bowl, pour a portion of jaggery syrup, mix well fast with a big spoon
  • Now dust your hands with rice flour, take a small portion of the mixture and press it well between your palms while shaping it into round… you need to be really fast while shaping them into ladoo/unde otherwise the mixture gets dried up.
  • Repeat the procedure with the remaining mixture, store them in a air tight jar when completely cooled
  • OR
  • You can pour the mixture into a greased butter paper in a tray and pat on it well, once it sets well remove, make pieces or crumble the whole slab (this time I forgot to take the pic, but I shall upload the pic soon) roughly and store in a jar
