HESARUKALU USLI/WHOLE GREEN GRAM SALAD

One more addition to the category of legume salad/usli, using whole green gram/hesarukalu/sabut hara moong. Be it any kind of usli, we make them regularly very often. It is a very good accompaniment with tili saaru/rasam, so during summer it is made more and more. So below is the recipe in my way for very easy, quick, tasty, yummy and healthy, low-fat, high fiber source of protein hesarukalu usli/whole green gram salad.

I always cook the green gram in an open pan, but it can be pressure cooked as well up to 2 whistles or until soft in a cooker.

Ingredients : measuring cup used – 250 ml

  • Whole green gram/hesarukalu – 1 cup
  • Water – 3 cups
  • Grated fresh coconut – 1/2 cup
  • Oil – 1/2 tbsp
  • Mustard seeds – 1/2 tsp
  • Green chili – 1 tbsp
  • Coriander leaves – 2 tbsp
  • Curry leaves – 1 tbsp
  • Sugar – 1/4 tsp
  • Lemon juice – 1 or 2 tsp
  • Salt – to taste (I have put 1 tsp)

PROCEDURE :

Pressure cooker method :

  • Boil 3 cups of water in a pressure cooker, add in rinsed green gram and cook until two whistle (or depending on your cooker, because one whistle is enough in my cooker)
  • Then heat oil in a pan, add in mustard seeds, green chili, coriander leaves, curry leaves, then add in pressure cooked green gram, stir once, add in salt, sugar and coconut, give it a good mix, remove from the heat and add in lemon juice

Open cooking method :

  • Heat oil in a pan, add in mustard seeds, when they crackle, add in green chilies, coriander leaves, curry leaves, stir once and add in water
  • When the water is boiling rapidly, add in rinsed green gram, stir well, when it is rapidly boiling again, turn the heat to medium and allow it to get cooked
  • When it is cooked well, add in salt, sugar and coconut, stir for a minute, remove from the heat, add in lemon juice
  • Whole green gram salad/usli is ready to be served
