Ingredients : measuring cup used 250 ml
- Thin rice flakes, red/white – 4 cups
- Ground nut – 1/2 cup
- Roasted gram/hurigadale – 1/2 cup
- Dry coconut flakes – 1/2 cup
- Sugar – 1 tsp (I have put raw cane sugar)
- Salt – to taste (I have put about a heaped 1 tsp of salt)
For tempering :
- Oil – 2 tbsp + 1 tbsp
- Mustard seeds – 1/2 tsp
- Curry leaves – 2 strings
- Turmeric powder – 1/2 tsp
- Cumin powder – 1/2 tsp
- Coriander seeds powder – 1/2 tsp
- Red chili powder (less spicy/hot, which gives out color) – 1 tsp
- Red chili powder (spicy/hot) – 1/2 tsp
- Hing – 1/8 tsp
PROCEDURE :
- Dry roast the rice flakes to remove the moisture in it (you can also sun dry it)
- Heat oil in a pan, add in mustard seeds, ground nut (you can use pre-roasted ground nut also) coconut flakes and curry leaves, roast everything un till light brown on medium heat, do carefully – do not burn
- Reduce the heat and add in all the spice powders, salt, sugar and hing, combine everything well
- Now add in roasted gram and rice flakes (let the heat be on low only) and combine everything well so that the masala gets into the rice flakes
- Turn off the heat, remove from the stove, allow it to cool completely, then store in an air tight container
