VEGAN BLUEBERRY COOKIES/ವೀಗನ್ ಬ್ಲೂಬೆರ್ರಿ ಕುಕೀಸ್

This is one more recipe, which I made for a contest held by one of the baking group on fb in association with Ossoro flavours. We were asked to make and post any number of recipes we can and I also tried and posted some 7 to 8 recipes I guess. I will share all those recipes here with you all.

To make these perfect vegan friendly, trending Blueberry cookies I started with a recipe from Molly Allen. But made it as per our requirement as I did proceed further.

Here I have made dried blueberry cookies using Sorghum Semolina & Pecan butter (homemade) & Fresh blueberry cookies are made using fine quality wheat semolina/chiroti rava, Wheat flour & Cashew nut butter (homemade)

Instructions :
  • Baking tray
  • MW temperature – 180 degree c
  • Baking time – 20 minutes
  • Demould Instructions – immediately
  • Cooling time – 10 minutes
Ingredients : measurement in grams

1. Pecans butter – 75 gm

2. Sorghum Semolina – 120 gm

3. Brown Sugar – 70 gm

4. Dried blueberries – 80 GM

5. Baking powder – 1/4 tsp

6. Salt – 1/8 tsp

7. White chocolate chips – 50 gm

OR

1. Cashew butter – 75 gm

2. Fine quality semolina – 135 gm + 30 gm wheat flour

3. Raw cane sugar -70 gm

4. Fresh blueberries – 80 gm

5. Baking powder 1/2 tsp

6. Salt – 1/8 tsp

7. White chocolate chips – 50 gm

Method :

NOTE : below I have written the procedure to make these cookies. Both the versions are made in the same procedure, its just the ingredients that vary in each cookie recipe. So go ahead and make both the dried & fresh blueberry versions at a time, like I did, or make them separately whenever possible/needed. But make sure you are going to try both of them and do not forget to let me know.

Kindly excuse me for I have missed posting some of the procedure pics here. Shall post whenever possible.

1. To make vegan butter, roast and grind the Pecans/cashews when they are slightly hot

2. Take vegan butter, sugar In a bowl and whisk until fluffy

3. Add the blueberry and whisk until all the berries are crushed

4. Add the remaining things to form the dough, cling wrap it and put in the freezer for half an hour

5. Divide the dough into twelve portions, flatten and place them on a baking tray …And

6. Bake them in a preheated oven at 180 d C for 20 minutes or until edges turn slightly brown. Remove from the oven, rest them on a cooling rack

7. You can see that dried & fresh blueberry vegan cookies are ready in no time
