Palak/ Spinach is one of the wonderful green leafy vegetables which contains Iron and many other nutrients, recognised for its wholesome nutritional, anti-oxidants and anti cancer composition. It has many health promotional and disease prevention properties. Spinach leaves are an excellent source of Vitamin K.

Maize also known as corn is a cereal grain, also has health supportive anti-oxidants. Corn is one of the most widely consumed cereal grain. Corn is very high in dietary fiber.

Ingredients : measuring cup used – 200 ml
  • Rice ..sona masoori/jeera samba/basmati – 1 1/2 cups
  • Water – 2&3/4 cups
  • Oil – 1 tbsp
  • Cumin seeds – 1 tsp
  • Chopped coriander leaves – 1/4 cup
  • Onions (Chopped) – 1/2 cup
  • Spinach(palak) leaves chopped – 2 cups
  • Sweet corn kernels – 1 cup
  • Turmeric powder – 1/2 tsp
  • Salt to – 2 tsp
To blend together :
  • Black pepper corns – 8
  • Cinnamon – 1 inch piece
  • Cloves -4
  • Green cardamom – 2
  • Ginger – 1 tsp
  • green chili – 4 (adjust)
PROCEDURE :
  • Rinse and wash the rice well, drain all the water and set aside. Boil 2&3/4 cups of water
  • Blend together Peppercorns, cinnamon, cloves, cardamom, ginger and green chili without adding water in a mixie jar
  • Heat oil in a pressure cooker, add cumin seeds and onion and fry them until soft
  • Then add the ground paste, coriander leaves, spinach leaves, corn kernels, rinsed rice and stir well
  • Now add boiled water, turmeric powder and salt, pressure cook until one whistle or as per your cooker’s requirement
  • Serve as such or along with any kind of raita or curd based chutney. I have paired it along with boondi raita
