I have made one more variation of this cake using fresh blueberries instead of Choco chips and walnuts. you can check the recipe below at the end.

This is my first ever Bundt cake recipe. When I first saw the Bundt pan I liked its shape so much that I immediately bought and made a cake in it.

This is a coffee/Tea time cake which is made using wheat flour and this is an egg free and butter free recipe sweetened with honey. And the two over ripe bananas are the egg replacers in this recipe. I liked its aroma while baking, its heavenly.

The cake also has the goodness of wood pressed/cold pressed coconut oil in it, which enhances the aroma wonderfully. And the cake also contains semolina to give that fluffy texture more prominence.

This is one such recipe which is so simple to make with fewer ingredients which are likely to available at home.

Instructions :

  • Tin size – NA
  • MW temperature – 160 degree C
  • Baking time – 30 to 35 minutes or clear/clean toothpick test
  • Demould Instructions – 10 minutes
  • Cooling time – 20 minutes

Ingredients : measuring cup used – 200 ml

  • Whole wheat flour -1 cup / 130 gm
  • Semolina/chiroti rave- 1/2 cup / 80 gm
  • Over ripe banana – 2 big / 175 gm
  • Coconut oil – 1/2 cup / 80 gm (I have put cold pressed coconut oil)
  • Honey – 1/4 cup / 60 gm
  • Baking powder – 1/2 tsp
  • Baking soda – 1/4 tsp
  • Salt – 1/4 tsp
  • Cloves powder – 1/2 tsp
  • Choco chips – 3 tbsp
  • Vanilla essence – 1 tsp
  • Walnuts – As much as you wish ( I have put 1/2 cup)
  • Water – add accordingly only if needed, but here I have put 100 ml

PROCEDURE :  

  • Preheat the oven @ 160 degree C (mine is microwave convection)
  • Grease/line the baking tin
  • Finely mash bananas, add honey, oil & vanilla essence & whip them well
  • Sieve together flour, salt, baking soda, baking powder, cloves powder & add it to the banana mix along with chiroti rava, combine everything gently
  • Add choco chips, walnuts and mix well, do not over mix
  • Add water accordingly only if needed, little at a time (I have put 100 ml)
  • Transfer the batter into greased tin & bake it for 30 – 35 mins or till tester comes out clean

Today I made this cake using 1/2 cup (80 gm) of fresh blueberries and this time I have put Pineapple essence and made the cake in a star shaped tin. The cake was equally tasty and awesome.
