Vangi is a Tamil word which translates to “brinjal’ and ‘bath’ is any dish prepared using rice or rice flakes or semolina etc, therefore this dish is called as vangi bath

A particular type of spice powder/masala powder is freshly made to prepare this rice & it is called as vangi bath powder or Palyada pudi.

Vangi bath (Brinjal Rice) is a nice aromatic, spicy rice preparation, which is one of the age old rice dish recipe and belongs to the category of authentic dishes. This rice bath has all the tastes like hot, salt, tangy, sweet and bitter.

As the heading itself depicts this dish can be made in two methods ie we have to prepare brinjal curry separately first , then it should be mixed with cooked rice or Put everything together one by one in a specific order and system in a pressure cooker to follow QCM aka quicker cooking method to make this rice dish

This rice dish tastes different in each method and in both the methods it turns out to be superb tasty and everyone at home like this rice dish, no matter in which ever method it is being made

The same masala powder can be used to make the rice bath using other vegetables like… Beans, Potato, Capsicum, Cluster beans, peas etc. This masala bath can also be made using semolina/sooji in place of rice.

FIRST METHOD :

Below you can have a look at the first and usual/old method ie, we have to prepare brinjal curry separately first , then it should be mixed with cooked rice,

Ingredients :

For Rice preparation : measuring cup used – 200 ml

  • Cooked Rice – 2 cups
  • Oil – 2 tbsp
  • Mustard seeds – 1/4 tsp
  • curry leaves – few
  • Brinjal – 1 cup ( cut length wise )
  • Turmeric powder – 1/2 tsp
  • Vangi bath powder – 2 tbsp or according to spice needs
  • Thick tamarind juice – 1 tbsp
  • Jaggery – 1 tsp
  • Salt to taste

PROCEDURE :

  • Heat oil in a pan, add mustard seeds, curry leaves, when they splutter … add brinjal and saute it until soft
  • Now put salt, turmeric powder, Vangi bath powder, tamarind juice, salt & Jaggery
  • Mix everything properly on medium heat
  • Simmer the heat and now add cooked rice, add salt according to the rice quantity
  • Combine everything well and remove from the heat
  • Brinjal rice/Vangi bath is ready to serve

SECOND METHOD :

And now you can have a look at the second method ie QCM method which is made in pressure cooker by putting all the ingredients at once and can also be called as a one pot meal as well

While making in this method, I have added couple of extra stuffs as well. I thought of putting a able spoon full of some kind of seeds and till now I have made this dish by adding any one type of seeds at a time like melon seeds, sesame seeds, Pumpkin seeds, flax seeds etc and I have even put walnuts couple of times

Other than that I have also put onion and capsicum along with brinjal

  • Heat oil put mustard seeds, curry leaves and seeds (which ever you are using)
  • When they splutter put onion, capsicum and brinjal, saute everything
  • Now put salt, turmeric powder, Palyada pudi/powder, tamarind juice, jaggery stir once and put boiled 2 cups of water
  • When the mixture boils again, then put 1 cup of well rinsed rice, let it come to boil again, then close the lid and cook up to 1 whistle
