Red carrot chutney | Winter carrot chutney |

ಕೆಂಪು ಕ್ಯಾರಟ್ ಚಟ್ನಿ | ಚಳಿಗಾಲದ ಕ್ಯಾರಟ್ ಚಟ್ನಿ |
Earlier I have posted the recipe of one more type of carrot (orange coloured one) chutney on my blog which uses regularly available orange coloured one.
But this time I tried making chutney with red coloured carrot, It turned out to be delicious. The sweetness of winter carrot enhanced the taste of the chutney. Prepared it in a little different method.
We even ate this mixed with steaming hot rice and it was mouthwatering. I’m surely going to make this chutney immediately again for couple of more times in near future, then this is going to be in the regularly done dishes list permanently
This chutney is really easy and quick to make as you just need to gather all the stuffs which are needed to make this chutney and then this chutney will be ready in a blink of an eye
Ingredients : measuring cup used – 250 ml
- Oil – 1 tsp
- Red Carrot – 1 cup (heaped, chopped)
- Red chilli – 6 byadigi & 3 hot
- Bengal gram (chana dal) – 2 &1/2 tbsp
- Urad dal – 1&1/2 tbsp
- Turmeric powder – 1/2 tsp
- Tamarind – 1-inch piece
- Asafoetida (Hing) – 1/2 tsp
- Grated fresh coconut – 1/4 cup
- Rock salt – 1 tsp or to taste
- Water – 3/4 to 1 cup

For tempering :
- Oil – 1 tbsp
- Mustard seeds – 1/2 tsp
- Curry leaves – couple of sprigs
PROCEDURE :
- Heat oil add all the ingredients one by one, saute until soft



- Let it cool for sometime, then grind into a coarse paste by adding water





- Prepare the tempering by adding mustard seeds and curry leaves in hot oil and pour on the prepared chutney

- Carrot chutney goes well with rotti, chapati, roti and can also eaten mixed with steaming hot rice as well.
