Mixed vegetables stir fry| mishra tarakari Palya

This is one of my favourite vegetable stir fry. A simple, quick & crunchy palya which has the goodness of varieties of vegetables. The only spice used in this is red chilli powder.
This goes well with almost everything as in Poori, Phulka, roti, akki (rice) rotti, rasam rice, curd rice etc. It has all nutrients preserved as the vegetables are steamed first before tossing it for a while.
Today I paired this palya along with Whole wheat flour-Bottle gourd rotti (roti) & Rice flour-Bottle gourd rotti (roti)
Ingredients : measuring cup used – 200 ml
Vegetables cut length wise
- French beans – 1/4 cup
- Carrot – 1/4 cup
- Baby corn – 1/4 cup
- Broccoli – 1/4 cup
- Ivy gourd – 1/4 cup
- Capsicum – 1/4 cup (I have not used)
- Onion – 1 big
Others :
- Ghee – 2 tsp
- Cumin seeds – 1 tsp
- Red chilli Powder – 1/2 tsp or according to spice level
- Turmeric Powder – 1/4 tsp
- Salt to taste
PROCEDURE :
- Steam all the vegetables (do not allow those to become soft, keep it crunchy) except onion & capsicum
- Also cut onion & capsicum length wise
- Heat ghee , add cumin seeds… let it splutter, put onion & capsicum…. fry until slightly soft
- Add in steamed vegetables, add salt , turmeric powder and chilli powder
- Combine everything well while stirring, remove from the heat
- You can sprinkle chopped coriander leaves on the top…. and the stir fry/Palya is ready to serve.
