Watermelon Curry – Soup |

After trying out my hands on Watermelon lassi, now I’m here with one more rare kind of recipe made using watermelon
Watermelon curry – soup has become my most favourite curry/soup lately. I really look forward to prepare this curry more often. I got the basic idea of making this curry from one of the books of Mrs. Nita Mehta. thanks to her for coming up with such a wonderful recipe.
I have made a lot of changes in it and has adopted it according to the likes & tastes of all of us at home. We really really enjoyed it both as soup and also with white rice (like saaru/rasam).
So gladly sharing the recipe of the same which I feel very essential and suitable for this hot weather, though we can equally enjoy this curry/soup during winter as well. Relish it in any way you would like to.
Here are some more Saaru/Rasam recipes → pudina saaru, Spinach saaru, Carrot saaru, menthya saaru, Bassaru-Palya, aloo saaru, Pineapple saaru
Ingredients : measuring cup used – 200 ml
- Watermelon puree – 3 cups
- Watermelon cubes – 1&1/2 cup
- Tamarind Pulp – 2 tbsp
- Water – 2 cups
- salt to taste
- Coriander leaves – 2 tbsp
For tempering :
- Ghee – 1/2 tbsp
- Cumin seeds – 1/2 tsp
- Black pepper powder – 1/4 tsp
- Grated ginger – 1/2 tbsp
- Slit green chilli – 1
- HIng – 1/8 tsp
- Turmeric powder – 1/4 tsp
- Curry leaves – few
PROCEDURE :
- Heat 1 cup of water and add in tamarind pulp and let it boil
- Now add watermelon puree, remaining 1 more cup of water, coriander leaves and salt and let it boil again
- Meanwhile prepare tempering using all the ingredients under the heading ” for tempering “
- Now add in watermelon cubes & prepared tempering and boil it for 1 more minute
- Remove from the fire and serve it with plain rice
- Or let it cool a bit and serve as a soup
