ಗೋಡಂಬಿ ಬಾದಾಮಿ ಬರ್ಫಿ | ಕಾಜು ಬಾದಾಮ್ ಬರ್ಫಿ |

As I know this is one of the yummy sweets often made using cashew nuts and almonds. I make cashew burfi or kaju katli (yet to share the recipe here) and almond burfi or badam katli (yet to share the recipe here) separately.

But this time I wanted to try using both the nuts together and I did sprinkle a good amount of chopped pistachio as well and made this burfi by adding very less amount of sugar as well.

When you use more amount of sugar, the burfi turns out little hard, but as I have used less amount of sugar it is soft and chewy (like halwa) but It turns out too yummy.

Ingredients : measuring cup used 250 ml

  • Cashew nuts – 1/2 cup
  • Almonds – 1/2 cups
  • Pistachios – 1/3 cup
  • Milk – 1/2 cup
  • Sugar (powdered) – 1/2 to 3/4 cup
  • Cardamom powder – 1/4 tsp
  • Ghee – 1 tbsp (I have put 1/2 tbsp)

PROCEDURE :

  • Soak almonds in enough warm water for some time and peel the skin
  • Grind cashews to a fine powder (sieve and grind till fine)
  • Now grind peeled almonds by adding milk to a fine paste
  • Heat ghee in a pan, add in ground almonds paste, cashew powder and stir till it becomes little thick
  • Now add in sugar, mix well and stir till it leaves the edges of the pan and becomes like a dough
  • Now transfer it to the greased plate, pat and sprinkle pistachio chunks
  • Allow it to cool completely and then cut it into desired shape
