KAJU-BADAM BURFI

One of the yummy sweets using cashew nuts and almonds. I make cashew burfi ie…kaju katli (yet to share the recipe in my blog) and almond burfi ie…badam katli (yet to share the recipe in my blog), but this time I tried it with using both the nuts together and sprinkled a good amount of chopped pistachio as well, using very less amount of sugar. When you use more amount of sugar, the burfi turns out little hard, but as I have used less amount of sugar it is soft and chewy (like halwa). It turns out too yummy. Ingredients :

  • Cashew nuts – 1/2 cup
  • Almonds – 1/2 cups
  • Pistachios – 1/3 cup
  • Milk – 1/2 cup
  • Sugar (powdered) – 1/2 to 3/4 cup
  • Cardamom powder – 1/4 tsp
  • Ghee – 1 tbsp (I have used 1/2 tbsp)

PROCEDURE :

  • Soak almonds in enough warm water for some time and peel the skin
  • Grind cashews to a fine powder (sieve and grind till fine)
  • Now grind peeled almonds by adding milk to a fine paste
  • Heat ghee in a pan, add in ground almonds paste, cashew powder and stir till it becomes little thick
  • Now add in sugar, mix well and stir till it leaves the edges of the pan and becomes like a dough
  • Now transfer it to the greased plate, pat and sprinkle pistachio chunks
  • Allow it to cool completely and then cut it into desired shape
