Baked whole wheat goji berry tart with mango Shrikhand filling|

Make something different during this summer’s mango season for your family and friends. Make something baked.

Recently I made this tart for a contest held by one of the baking group on fb in association with Ossoro flavours. We were asked to make and post any number of recipes we can and I also tried and posted some 7 to 8 recipes I guess. I will share all those recipes here with you all.

The specialty of this tart is, I have put Goji berries in the tart shell itself and then filled the baked tart with mango Shrikhand. I have put together all the possible healthy ingredients – no doubt, which I always try to do.

Goji berry is native to Asia and they have been used as a medicinal herb and food supplement since ages. It has got many health benefits. They contain high level of healthy antioxidants. Also rich in vitamins A and C. Besides promotes healthy skin and stabilizes blood sugar. They can be used fresh or dried while making smoothies, trial mixes, Salads, baked goodies, desserts etc.

Today I have made tart shell by putting Goji berry along with wheat flour. I mean I have mixed the goji berries with wheat flour while kneading dough.

And mango Shrikhand has been made using home made hung curd, organic jaggery, dasheri mango (a variety of mango available here in Gurgaon), saffron strands and Ossoro’s Cardamom flavour.

Instructions :
  • Tin size – tart shells
  • MW (convection) temperature – 180 degree c
  • Baking time – 10 to 12 minutes
  • Demould Instructions – immediately
  • Cooling time – 15 to 20 minutes
Ingredients : measurement in grams and spoons
To make tart shell :
  • Wheat flour – 75 gm
  • Baking soda – 1/4 tsp
  • Salt – 1/8 tsp
  • Ghee – 25 gm
  • Honey – 1 tbsp
  • Natural vanilla flavour – 1/2 tsp
  • Goji berries – 15 gm
  • Milk – 1 to 2 tbsp
  • Pistachios – to sprinkle on the top
To make mango Shrikhand : measuring cup used – 200 ml
  • Hung curd – 1 cup
  • Mango pulp – 1 cup
  • Organic powdered jaggery – 1/4 cup
  • Cardamom flavour – 1/2 tsp
  • Shrikhand flavour – 1/ tsp
  • Saffron milk – 1 tbsp
  • Saffron strands – 1/8 tsp

METHOD – Gather the above ingredients and mix everything well and the Shrikhand is ready. You can use a hand blender to get it mixed uniformly.

PROCEDURE :

Goji berry looks like this

  • Take ghee, honey in a bowl mix well
  • Add wheat flour, baking soda and salt by sifting directly to the ghee honey mixture
  • Combine everything well by rubbing with your finger
  • Now add the flavour, Goji berries (halved each one) and form into a dough by adding milk gradually. 1&1/4 tbsp of milk was enough for me.
  • Divide into six equal portions and press into the greased tart moulds (I greased the moulds using ghee)
  • Prick them with fork or toothpick (I forgot )
  • Bake in a preheated oven at 180 d C for 10 to 12 minutes, Remove from the oven and let it rest on the mesh.
  • Once cooled completely, fill each tart with mango Shrikhand, sprinkle some chopped Pistachios on top and enjoy yummy tart.
