BEETROOT STIR FRY| BEETROOT PALYA|

Beetroot provide many health benefits. Eating beetroot help lower & increase blood flow, anemia, indigestion, constipation and many many more health benefits. Beetroot greens strengthens our immune system. Also said that beetroot juice can improve athletic performance. Beetroot contains a lot of Iron and Iron helps in the formation of hemagglutinin , the part of the blood that helps transport oxygen and nutrients to various parts of the body. We can also include Beetroot in our food in the form salad. Here is a type of subji made using beetroot, which is very easy and quick to make.
Ingredients :
- Beetroot (grated) – 2 cups
- OR
- Beetroot & Carrot – 1 cup each
- Oil – 1 tsp
- Mustard seeds – 1/4 tsp
- curry leaves – 1/2 tbsp
- Split bengal gram – 1 tbsp
- Split black gram – 1/2 tbsp
- Whole red chillies (broken) – 2 or 3 (hot)
- Grated fresh coconut – 1/2 cup or as per taste
- salt to taste
- Water as needed -approximately 1/3 cup or little more
PROCEDURE :
- Heat oil in a pan, add in mustard seeds, bengal gram, black gram, curry leaves and broken red chillies and allow them to splutter
- Now add in grated beetroot, saute for a minute, then add little water, combine, cover and cook till soft
- Finally add in salt and coconut and combine everything well
- Serve with rasam/saaru rice, roti, poori, paratha, chapati, rotti etc.
