Cucumber stuffed flat bread| southekayi Paratha

We make rotti using rice flour and cucumber (southekayi akki rotti) generally. But I wanted to make stuffed wheat flour paratha using cucumber. So tried making this paratha which suits the hot weather as well and it turned out to be so yummy. As cucumber has got lot of water content in it, you need to squeeze it really well. We can also make paratha by mixing the grated cucumber directly into the flour, both ways it tastes superb. So sharing the recipe with you all.

Ingredients : measuring cup used – 250 ml
- Whole wheat flour – 2 cups
- Grated cucumber – 1 cup
- Grated fresh coconut – 4-5 tbsp
- Green chilli – 1
- Coriander leaves – 1/2 cup
- Curry leaves – few
- Salt to taste
- Oil to roast the Paratha
PROCEDURE :
- Squeeze well the grated cucumber and knead the dough with wheat flour, using that cucumber juice by adding little salt
- Grind together chilli, coconut without water
- Add ground paste, chopped coriander leaves, curry leaves and salt to the squeezed cucumber & mix well
- Take a portion of the dough and place a portion of the stuffing, seal it properly and roll it
- Cook on both the sides using little oil & serve
