Mint chutney| Pudina chutney|

Fresh Mint leaves from my Kitchen garden…. Immediately I prepared chutney using them. It tastes entirely different … so fresh… very aromatic. It is used as the side dish with Huli (sambar), Saaru (rasam), rotti, poori, chapati etc. It is also eaten with rice by adding few drops of oil.
Ingredients : measuring cup used – 200 ml
- Mint leaves – 1 cup ( tightly packed )
- Grated fresh coconut – 1/2 cup
- Split black lentils/ Urad dal – 2 tbsp
- Red chilies – 4 to 6 or according to spice level and green chilies can also be used
- Tamarind – 1″ piece
- Salt to taste
For tempering :
- Oil – 1 tsp
- Mustard seeds – 1/4 tsp
PROCEDURE :
- Rinse the mint leaves well in enough water
- Heat a pan and dry roast urad dal, red chilies, mint leaves, tamarind and coconut one by one
- Take out from the heat and let it cool
- Add salt and grind coarsely using little water
- Prepare tempering and pour over the chutney
