ಮುಸುಕಿನ ಜೋಳ ಮತ್ತು ನಿಂಬೆ ಹಣ್ಣಿನ ಚಿತ್ರಾನ್ನ |

Another recreated recipe by me, with coarsely ground fresh corn kernels and lemon juice, which I tasted in one of the restaurant in Delhi (Saravana Bhavan).

This has been paired along with banana raita/sasive. Somehow I have not posted the recipe of banana raita or sasive till now on my blog, however…… I usually prepare it, as an accompaniment with spicy dishes or saaru (rasam), huli (sambar) etc.

Today I just prepared it as an accompaniment with this corn lemon rice … and both together goes very well. Here is the recipe for crushed corn lemon rice.

Ingredients : measuring cup used – 250 ml

  • Cooked Rice – 2&1/2 cups
  • Salt to taste
  • Lemon juice – 2 tbsp or as per taste

To grind together : 

  • Corn Kernels (raw) – 1/2 cup
  • Mint leaves – 2 tbsp
  • Coriander leaves – 1/4 cup
  • Curry leaves – 10 leaves
  • Grated fresh coconut – 1/3 cup
  • Green chilli – 10 to 12 ( adjust)

Other Ingredients :

  • Oil/Ghee – 2 tbsp
  • Mustard seeds – 1/4 tsp
  • Bengal gram – 1 tbsp
  • Black gram – 1/2 tbsp
  • Curry leaves – 10 leaves
  • Cashew nuts – 1/4 cup (broken)
  • Onion – 1 big (chopped)

 

PROCEDURE : 

  • Grind together all the ingredients under the heading ” to grind ” and keep it aside
  • Heat 2 tbsp Oil or Ghee (I use Ghee) and put all the ingredients under the heading ” Other ingredients ” , one by one
  • Fry the onion till transparent, then add ground corn paste and saute well until raw smell disappears
  • Now add cooked rice, salt and lemon juice… combine everything well
  • Serve as such or with any raita
