Potato capsicum fry | aloo shimla mirch sabji |

ಆಲೂಗಡ್ಡೆ ದಪ್ ಮೆಣಸಿನಕಾಯಿ ಪಲ್ಯ |
This one is definitely one of my most favourite subji ie aloo shimla mirch, which is a very easy and simple vegetable dish to make with very few stuffs easily available at home
Potatoes are extremely popular in Northern India and have multipurpose usage. Actually Potato is also a source of Vitamin C and provides useful amount of starch, niacin and thiamine.
As usual everyone does it in many ways, but I make it very simply by adding only turmeric powder and red chilli powder for spice and cumin powder as herb.
Usually in this subji potatoes are used in more quantity than capsicum, but I use equal quantity of both the vegetables. Now let me start with the recipe.
Today I paired this Potato capsicum fry/sabji along with coriander paratha/chapati & Mango seekarane/aam ras
Ingredients :
- Potatoes – 2 big
- Capsicum – 2 big
- Cumin seeds powder – 1/2 tsp
- Red chilli powder – 3/4 tsp (non spicy, which also gives color) (adjust)
- Turmeric powder – 1/2 tsp
- Oil – 1&1/2 tbsp
- Mustard seeds – 1/4 tsp
- Salt to taste
- Water – 2 tbsp
- Lemon juice – around 1 tsp (optional)
PROCEDURE :
- Wash well and dice both potatoes and capsicum
- Heat enough water, and add in diced potatoes, cook till soft (or you can steam them too) and add in salt , drain all the water
- Heat oil in a pan, add in mustard seeds, cumin seeds powder and diced capsicum and saute well


- Once capsicum is soft add in cooked potato, turmeric powder, red chilli powder and salt
- Combine everything well and add in 2 tbsp water and stir well while mixing everything
- Remove from the fire and Potato capsicum fry is ready to serve
