Sajjige holige| Semolina stuffed sweet puran poli

Sajjige holige is a delicious, yummy sweet flat bread recipe which is necessarily made on the day of Anantha Padmanabha vratha. Either sajjige holige or bele holige is made on that day.
Sajjige is a kannada word which literally means sheera or sooji ka halwa made using jaggery. So sweet jaggery sheera is stuffed in whole wheat flour dough. On regular days also it can be made for lunch box or breakfast.
This is a healthy dish with the goodness of whole wheat flour, wheat semolina, jaggery, dry coconut and almond. This is a very simple and easy recipe to do on any special occasion. We can make 8 holige of the shown size from the below mentioned quantity of ingredients
Ingredients : measuring cup used – 250 ml
For the outer layer :
- Whole wheat flour – 2&1/2 cups (I myself get the flour milled)
- Ghee – 1/2 tbsp
- Rice flour – 1 tbsp
- Turmeric powder – 1/4 tsp
- Salt – a pinch
- Water to knead the dough
- Wheat flour – for dusting
- Oil – for roasting the holige
For the stuffing :
- Semolina/sooji/godhi rave – 1 cup
- Ghee – 1 tbsp
- Jaggery – 1 cup
- Grated dry coconut – 1/2 cup
- Cardamom powder – 1/4 tsp
- Almonds – 20 nos.,
- Water – 2&1/2 cups
PROCEDURE :
For the outer cover :
- Sift the flour and keep aside.
- Put together 1/2 tbsp ghee, 1 tbsp rice flour and 1/4 tsp turmeric powder in a bowl and rub it in a circular motion, with your fingers till it becomes soft like butter



- Then add sifted flour into it, mix everything well. now knead the dough using water little at a time , make it firm but not hard
- Cover and keep it aside for at least one hour

For stuffing :
- Dissolve 1 cup of jaggery in 2&1/2 cups of water completely and strain it to remove the dust particles
- Grind almonds into a fine powder in a mixie
- Heat dissolved jaggery water in a pan, add in 1 tbsp ghee, grated dry coconut, powdered almond and allow it to boil



- Now add in 1 cup of semolina and cardamom powder and keep stirring

- Stir continuously till the mixture becomes like a mass and leaves the edges of the pan
- Remove from the fire and allow it to cool completely


How to make holige :
- Pinch a portion of the dough and stuffing, place the stuffing in the dough and cover it from all the sides


- Roll it into a thin disc by using the flour for dusting

- Heat the tawa and roast the holige on both the sides
- Serve hot with little ghee
