Amrutha Phala is a sweet rice fudge preparation made by using rice, coconut, milk and jaggery. Actually many people do not use milk for making akki haalbai, but the rest of the procedure and the ingredients used are exactly same.

I don’t prepare this particular fudge very often, as we all are not very fond of this sweet, instead I regularly make whole wheat haalbai/whole wheat milk fudge, which is one of our favourite !

Ingredients : measuring cup used – 200 ml

  • Rice – 1/2 cup
  • Grated fresh coconut – 1/2 cup
  • Milk – 3/4 cup
  • Water – 3/4 cup
  • Jaggery – 3/4 to 1 cup
  • Ghee – 1/2 tbsp (adjust)
  • Cardamom powder – 1/8 tsp

PROCEDURE :

  • Grind rice and coconut into a fine paste using milk
  • Dissolve jaggery using 3/4 cup of water, pass it through the sieve/strainer to remove the impurities
  • Heat ghee in a pan, add in ground mixture and strained jaggery into it and keep stirring continuously on medium flame
  • When it becomes thick and leaves the edges of the pan and comes as a whole, transfer it to a wet plate  and allow it to cool for sometime and then cut into desired shape
  • One more way to check whether it is done or not is… wet your hand and touch the mixture, if it won’t  stick to your fingers then it means it is done
